What's the best casserole recipe you have taken to a potluck dinner?

Both of these are delicious and great for potlucks:





Chicken Zucchini Casserole (Quick Cooking magazine)





6 oz. (about 3 陆 cups) stuffing mix


戮 cup butter, melted


3 cups diced zucchini


2 cups cubed cooked chicken


1 can (10 戮 oz.) condensed cream of chicken soup, undiluted


1 medium carrot, shredded


陆 cup chopped onion


陆 cup sour cream





In a large bowl, combine stuffing mix and butter. Set aside 陆 cup for topping. Add the zucchini, chicken, soup, carrot, onion, and sour cream to the remaining stuffing mixture. Transfer to a greased 2-qt. baking dish. Sprinkle with reserved stuffing mixture. Bake, uncovered, at 350掳 for 40 - 45 minutes or until golden brown and bubbly.





Corn Casserole (My Aunt Betsy's recipe)





17 oz. can regular corn, drained (or approx. 17 oz. of frozen corn works, too)


17 oz. cream style corn


1 stick margarine, melted


3 eggs, beaten


8 oz. sour cream


1 small box Jiffy corn muffin mix





Melt stick of margarine in 13 x 9 pan. Add other ingredients. Mix well. Bake at 350 for about 50 minutes.What's the best casserole recipe you have taken to a potluck dinner?
This is my favorite to take places..always a big hit .





CHICKEN AND BROCCOLI CASSEROLE





4 boneless skinless chicken breasts, cooked and cubed.


3 cups of cooked rice


1 can of cream of mushroom soup


1 can of cream of chicken soup


1 can of cheddar cheese soup


1 bag of chopped frozen broccoli.





mix all ingredients together and place in a large baking dish.


bake at 350 for 30-45 min, or until top is golden brown and casserole is bubbly.





This is really good and can be made a day ahead and cooked the next day. also freezes well too.





When i take this to potluck dinners, i always make it in a disposable pan. No dishes to take home and no clean up.

Cubed chicken breasts covered with cream of mushroom soup. Put in a few slices of mushroom and cover with barely moistened stove top stuffing. Bake at 375 for 40 min. Be sure not to over-brown. When it gets brown enough, cover with foil. Yum! Could add anything to this really. Add broccoli and change soup to cr of chicken. Maybe throw in some cheese?
Creamy Vegetable Casserole





1 pkg. frozen california vegetable mix (16 oz.)


1 can cream of Mushroom soup


1 carton garden vegetable spreadable cream cheese


1 cup seasoned croutons


Prepare the vegetables according to directions and drain.


Stir in the soup and cream cheese.


Put in a 1 1/2 qt. casserole dish and sprinkle the croutons on top.


Bake 375 for 25 minutes or till bubbly.





I substitute Cream of chicken soup and add 3-4 cups chopped cooked chicken breast meat.


Simple, easy and delicious
Tater tot hotdish





I make mine in the big trkey pan





Then mix all these into the black and white dotted big turkey roaster


4#'s burger browned and drained.


1 family sized can cream of mushroom


1 ';';';';'; cream of chicken


1 small can cream of celery


1/2 bag of family sized Tater Tots ( Ore Ida I feel are the best)


and a 2-3 cans of sweet corn drained I put peas in mine too





Mix well





Layer other half of Tater Tots on top





Cook in a 350 oven till heated through approx 1 1/2 hours
I am always asked to bring this casserole.


-all to gether in a large bowl that is safe for baking


-2 cups diced ham


-1 cup instant rice (not cooked)


-2 cans cream chicken soup


-1 cup milk


-3/4 of a jar of cheeze whiz


-at least 2 cups partially steamed broccoli you can use more if your a broccoli fan


1/3 cup sauteed choppen onion, sauteed in 1/2 stick butter, again you can use more or less according to your taste


-couple dashes of worchestire sauce if you have it.


-little pepper,, no salt it comes out of the ham


-Stir up real good, bake on 350 for about 45 mins.


-If it seems to thick add a little milk before baking.
Ritzy Chicken Casserole





2 sleeves Ritz crackers


1 can cream of chicken soup, or cream of mushroom


1 carton sour cream, (8 ounces)


1/2 to 1 cup chicken broth


4 to 6 boneless chicken breasts, cooked


4 ounces margarine, melted





Crumble one sleeve of Ritz crackers in the bottom of a 2 to 2 1/2-quart casserole dish. Drizzle 1/2 of the melted margarine over the crackers. Mix chicken with soup, sour cream, and broth. Pour over crackers. Crush the remaining sleeve of crackers over the chicken mixture. Drizzle the remaining melted margarine over the crackers.





Bake at 300 degrees for 30 to 45 minutes.


Serves 6.
Crockpot enchiladas





4-6 tortillas


1.5 lb hamburger meat


1 can rotel


1 can pinto beans


1 can black beans


8 oz mexican blend cheese





Cook the beef until done, add rotel and beans, heat another 5 minutes. Put a little bit of the mixture in the bottom of the crock pot, just enough to barely cover the bottom. Place a tortilla down, add beef mixture, enough to cover tortilla, add a handful of cheese. Repeat layers until finsihed.





Feel free to add spices or jalepanos to your taste. If you do not have a crockpot, you could do this in a casserole dish and put in the over at 250 until heated through. This is enough for 4 people. I always get compliments when I cook this.
My famous Green Bean Casserole


1 large can green bean drained


1 can cream of mushroom soup


1 half can of milk (use empty soup can )


1 large can of french fried onions


2 pieces of cooked bacon crumbled up





Place green beans in center of dish - spread french fried onions around edges of pan to hold beans in the middle - spread crumble bacon on top of beans - mix soup with milk and pour over the entire dish. Bake at 350* for 30 minutes or until soup is bubbling. EASY %26amp; GOOD.





Try my Chicken and Dumlings Casserole too:


1 large glass pan


2 large cans of chunky style cream of chicken soup


2 cans of large buttermilk bisquits





Pour soup into glass pan and lye bisquits across the entire top of pan and bake at 350* for 30 minutes or until bisquits are browning on top. QUICK, EASY, and GOOD!
Tomato,Olive and Wild Rice Casserole





Box of wild rice (I use uncle bens Original Recipe) cook this according to package directions








1/2 c chopped white onion


1 c sliced mushrooms


1/2 c butter


1 c canned chopped tomatoes


1 c chopped black olives


1 c grated cheddar cheese





Sautee onions and mushrooms in the butter.


Combine the onion/mushroom mixture in a bowl with the tomatoes, olives, and most of the cheese. Add cooked rice. Place in a casserole dish and sprinkle with remaining cheese. Bake at 350 degrees for 45 minutes!





( **I never use the full 1/2 c of butter.....usually only a couple tablespoons)

Very popular and easy recipe





HASH BROWN CASSEROLE





1 cup onion, diced


1/4 lb. (1 stick) butter, thinly sliced


1 (8 oz.) container sour cream or plain yogurt (optional)


1 (8 oz.) pkg. Kraft Cracker Barrel sharp cheese ( or can use package of shredded cheese)


1 can Cream of Chicken soup


1 (2 lb.) bag frozen hash brown potatoes, thawed


1/2 to 1 cup potato chips or corn flakes





Stir together well the diced onion, sour cream or yogurt, grated cheese, thinly sliced butter, and Cream of Chicken soup. Add the hash browns and mix well.


Spread this mixture evenly in a casserole dish and top with crushed chips or corn flakes.





Bake at 350掳F 1 to 1 1/2 hours.





Makes 8 to 12 servings.
