Potluck recipes?

We are haveing a potluck at work and I was wondering if any one had any good potluck recipe ideas. I really want to make something in a crockpot because I can just cook it here at work. Any easy recipe ideas?

Apple Bean Pot





53oz can baked beans, well drained


1 large onion, chopped


3 tart apples, peeled and chopped


1/2 cup ketchup OR barbecue sauce


1/2 cup firmly packed brown sugar


1 pkg little smokies OR 1lb hot dogs, sliced





Put everything in the crockpot, mix well, cover and cook on low for 3 to 4 hours and then on high for 30 minutes.

Four Beans and Sausage





15 oz can Great Northern beans, drained


15 oz can black beans, drained


15 oz can red kidney beans, drained


15 oz can butter beans, drained


1 1/2 cups ketchup


1/2 cup chopped onion


1 green pepper, chopped


1 lb smoked sausage, sliced thin or diced


1/4 cup brown sugar


2 garlic cloves, minced


1 tsp Worchestershire sauce


1/2 tsp dry mustard


1/2 tsp Tabasco sauce





Combine, cover, cook on high 4 to 5 hours

Sloppy Chicken





28oz can boneless chicken


1 can cream of chicken soup


1 stack butter crackers, crushed


15 oz can chicken broth


1 can cream of mushroom soup





Combine in slow cooker, cover, cook on low 5 to 6 hours, stirring occasionally. Serve with bread or on buns.

For dessert, I'd do an Easy Fruit Crisp:





9 x 13 pan... put:





1 can cherry pie filling


1 can (20oz) crushed pineapple





Mix that up in the pan... then top with





1 box yellow cake mix... then drizzle with


1 stick margarine, melted





Bake at 350 for about 30 minutes or until golden
Chocolate Pudding Cake


1 package (18-1/4 ounces) chocolate cake mix


1 package (3.9 ounces) instant chocolate pudding mix


2 cups (16 ounces) sour cream


4 eggs


1 cup water


3/4 cup vegetable oil


1 cup (6 ounces) semisweet chocolate chips


Whipped cream or ice cream, optional


In a mixing bowl, combine the first six ingredients. beat on medium speed for 2 minutes. Stir in chocolate chips. Pour into a 5-qt. slow cooker that has been coated with nonstick cooking spray. Cover and cook on low for 6-7 hours or until a toothpick inserted near the center comes out the moist crumbs. Serve in bowls with whipped cream or ice cream if desired. Yield: 10-12 servings.

Slow Cooker Bread Pudding


8 cups cubed day-old unfrosted cinnamon rolls


4 eggs


2 cups milk


1/4 cup sugar


1/4 cup butter, melted


1/2 teaspoon vanilla extract


1/4 teaspoon ground nutmeg


1 cup raisins


Place cubed cinnamon rolls in a 3-qt. slow cooker. In a small mixing bowl, combine the eggs, milk, sugar, butter, vanilla and nutmeg; beat until smooth. Stir in raisins. Pour over cinnamon rolls; stir gently. Cover and cook on low for 3 hours or until a knife comes out clean. Yield: 6 servings. *Editor's Note: 8 slices of cinnamon or white bread, cut into 1-inch cubes, may be substituted for the cinnamon rolls.

Hot Cranberry Punch


8 cups hot water


1-1/2 cups sugar


4 cups cranberry juice


3/4 cup orange juice


1/4 cup lemon juice


12 whole cloves, optional


1/2 cup red-hot candies


In a 5-qt. slow cooker, combine water, sugar and juices; stir until sugar is dissolved. If desired, place cloves in a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add spice bag and red-hots to slow cooker. Cover and cook on low for 2-3 hours or until heated through. Before serving, discard spice bag and stir punch. Yield: 3-1/2 quarts.
