having a potluck at work that is mexican themed i am new to the job and have not yet received a pay check so i need something fairly inexpensive to make.What is a recipe for a good dish to take to a potluck that is mexican themed?
Enchiladas!


My mother is Mexican and any time we had a potluck, she'd bring enchiladas. They're surprisingly easy to make, inexpensive, filling, and REALLY popular with everyone. (You'll also be sure to impress folks.)





What you need:


1 can of enchilada sauce (find it in the Mexican foods aisle)


1 white onion


cooking oil


corn tortillas


chicken breast or ground beef - if you want meat


a big chunk of monterrey jack cheese, or a bag of shredded 'Mexican' cheese.


sour cream


a bit of cilantro





If you want meat (you don't have to, you can always just use cheese and chopped onions), start by heating a bit of cooking oil in a pan and flavoring it with a slice of white onion.





Once the onion is soft and starting to turn brown, pull it out. It's only there to flavor the oil.





Now, add the meat. If it's chicken breast, cook all the way through. If it's ground beef, cook until it's all brown. Flavor either one with a bit of salt and pepper.





If it's the chicken you cooked, let it cool, and then use your fingers to shred it into pieces. If it's the beef, drain off the excess fat and transfer it to a bowl.





Now, get ready to assemble your enchiladas:


Have your meat ready in a bowl or plate


Open your can of enchilada sauce and gently heat it in a sauce pan - not too much, just let it get warm.


Have a bowl/bag of grated cheese nearby.





You'll want to create a little assembly line: Have your package of tortillas; a way to heat up your tortillas on the stove (either in a pan, or on a comal/flat griddle if you have one); have your warm enchilada sauce in a pan/bowl large enough that you can dip your tortilla in it; next to the sauce have a cake or casserole pan (glass or metal is fine) - coat the pan with just a bit of enchilada sauce to keep the tortillas from sticking.





Now, one at a time, heat up a corn tortilla just to the point where it's warm and flexible. With your fingers, dip it into the enchilada sauce, getting it nicely coated. Then put the tortilla in the pan - add your meat or cheese filling, and then roll it up. Place it to one side of the pan. Continue doing this until you fill up the pan with the rolled up enchiladas.





Now, spread grated cheese generously over the top.





Put the pan in a warm oven, about 425F is good, for about 10 minutes - just long enough for the cheese to melt and the sauce to soak into the tortillas.





You're done. Garnish with a dollap of sour cream, several really thin slides of the white onion (separated into single rings), and sprinkle a bit of chopped cilantro.

It's nice if you can serve them warm, but they're delicious even at room temperature. Just take them in the same pan you cooked them in - very easy.

Chilaquiles. It's basically an enchilada caserole

This is my husband's refried bean dip recipe. It's addicting, I will promise you that the bowl will be empty at the end of the potluck. Double the recipe or make separate batches as needed.





1 can Rosarita spicy refried beans


1 bottle Taco Bell hot sauce


1/3 pound Velveeta, cubed


Fresh cilantro and lime juice, optional but very good





Mix the refried beans, Velveeta, and HALF the bottle of hot sauce. Nuke for 3 minutes, stir, another 3 minutes, stir, repeat until hot and cheese has melted. Scoop into your serving bowl, float the last half of the bottle of hot sauce on top, and sprinkle with chopped cilantro and a spritz of lime juice. And just grab a bag or two of tortilla chips and serve with the dip.

4 avocados


1/2 c chopped onion


1/2 cup Rotel tomatoes


1/2 cup cilantro or to taste


1 - 4 oz can chopped green chiles


2 tsp chopped jalapenos





Mash avocado, add rest of ingredients, salt and pepper to taste. Add about 1 Tbsp lemon juice.
Buy fresh corn tortillas, cut into wedges and fry them in hot oil. Drain them well, spread them out and season them with lime salt. Bring some fresh or bought salsas to cover mild, spicy and sweet.


Do the same thing with flour tortillas but sprinkle them with cinnamon sugar.
Chicken Quesadilla Pie: Use a large burrito-sized tortilla as the pie shell. Buy a rotisserie chicken (or roast your own). Cut the meat into bite-sized pieces (you need about three cups). Place the chicken in a bowl, add 1/2 cup of salsa and one cup of shredded cheese (cheddar or Mexican blend). If you want a little heat, dice up a chipotle pepper (I especially like the canned ones in adobe sauce: add about a teasponn of the sauce) or a jalapeno and add it. Mix well and put into the tortilla pie shell. In a clean bowl, beat an egg, one cup of flour, and one cup of milk. Add another cup of the shredded chesee. Pour over the chicken. Bake at 425* for about 20 minutes. Let cool and slice into wedges. You can also make these appetizer sized by cutting the tortilla into two and a half inch rounds with a biscuit cutter. Place the tortilla rounds into mini-muffin tins, fill and bake as described for a whole pie.
Spanish rice is inexpensive to make. I use allrecipes.com for all my recipes. Or you can make it like this for a delicously simply and inexpensive recipe.

Fresh Cilantro..........................that's it!
1 lb. hamburger


1 small onion


1 small can Hormel chili (or any brand you like)


1 package taco seasoning


1 cup grated cheese


1 can stewed diced tomatoes


3 flour taco shells


Fry the hamburger and onion with taco seasoning pour juice from the stewed tomatoes on the bottom of 12x12 baking dish. Then rip the flour shells into pieces covering the bottom of dish and start layering hamburger mix 1/2 can chili 1/2 can stewed tomatoes some cheese. Then layer again ending with the flour shell on top.. Bake for 30 minutes.. top with lettuce salsa sour cream when ready to serve. If you need a bigger recipe just double ingredients

Refried Beans mixed with some water


Cheese


Tortilla Chips-- stale and broken is fine.





Layer in a baking pan starting with the salsa. Make sure your last layer is cheese and then bake in an oven. It is better than Nachos for parties since it stays hotter longer and you can eat it with a fork. It's also good when you are just about out of food.
