4 blocks of cream cheese


2 lbs of sausage browned %26amp; drained


2 cans of rotel

Orzo salad with sesame dressing





You can also add other blanched vegetables to this dish if you wish. This makes a lot and the best part is that the salad should be served at room temperature.





Ingredients





Sesame dressing:





1 teaspoon salt


3/4 cup corn oil


1/4 cup dark [toasted] sesame oil


1/2 cup rice vinegar or cider vinegar


1/2 teaspoon orange zest, grated


1 teaspoon soy sauce


2 teaspoons scallions, thinly sliced


1 teaspoon fresh peeled ginger, minced


1/2 teaspoon garlic, minced


1/4 teaspoon crushed red pepper flakes


1 teaspoon pepper


1 tablespoon sugar


2 tablespoons fresh cilantro or parsley, minced





Salad:





1 pound uncooked orzo


1 tablespoon dark [toasted] sesame oil


3 cups carrots, shredded


2 cups raisins


1 cup pine nuts, lightly toasted





Method





Dressing


Combine all the dressing ingredients by hand or in a food processor and set aside.





Salad


Cook orzo in rapidly boiling salted water until tender, 7 to 10 minutes or according to the package instructions. Refresh under cold water; drain well and let rest to finish draining, about 2 to 3 minutes. Toss with sesame oil. Cool completely. Combine the pasta with the carrots, raisins, pine nuts, and dressing. If you're making it in advance, add the carrots and pine nuts just before serving to keep them crunchy.





Serve at room temperature.

Homemade Mac and Cheese:





2 TBS butter


2 TBS flour





1 pound Macaroni





4 cups whole milk


12oz - 16oz Shredded Cheese: Cheddar, Jack or Colby


1 tsp Salt


1 tsp garlic powder


1 TBS dry mustard(optional)


Paprika





Start water for macaroni





Melt the butter and turn off heat. Stir in flour until smooth and add two cups of the milk. Bring to a simmer stirring until it starts to thicken. Add in the rest of the milk with the salt and mustard. Bring to a simmer and take off heat. Stir in about half of the cheese until smooth.





Cook macaroni. Drain well. Put sauce into pasta pot while pasta is draining. Stir in macaroni and the rest of the cheese.





Transfer to 9x13x2 baking pan. Top with bread crumbs and make a ';smiley face'; with the paprika. Bake at 350 until the crumbs start to brown.
Cheatin' Chocolate Mousse





2 large packets of Jello Chocolate Pudding


4 tablespoons of Hershey's cocoa powder


4 cups whipping cream and add an extra cup of milk.





With your hand mixer, whip it up. If it gets too stiff, add 1/3 cup milk to thin it a little. Put plastic wrap over the bowl and take it to the office party with an ice cream scoop.
Pink Fruit Salad


1 can cherry pie filling


1 can crushed (drained) pineapple


1 can sweet condensed milk


8 ounces of Cool Whip





Mix all ingredients and put in the fridge to chill for 2-3 hours.
Frozen Meat Balls + 1 jar of bbq sauce + 1/4 cup water simmer for 2 hours.. done!
