Potluck dessert recipes needed - v. challenging!?

I need to bring a dessert to a BBQ potluck tomorrow, but the requirements are rather challenging!


1. Not super sweet - must be something light, and the host has expressed a preference for something fruity.


2. Can't require freezing - will be in a car for 1 hour.


3. No alcohol or gelatine to comply with religious requirements of some of my friends.Potluck dessert recipes needed - v. challenging!?
Berry Cobbler


Cook berries (2 C.) with 1 cup sugar for 15 min.


Mix in bowl 1/2 C. self rising flour


1/2 C. milk


3 T. butter


In baking dish pour berries and juice and then pour flour mixture over. Sprinkle sugar over crust for a prettier crust


Bake 30-45 min @ 350' the crust should be golden brown

Berry Trifle





1(10.75 oz) prepared pound cake, cubed (Sara Lee)


3(10 oz) frozen packages blueberries, raspberries, blackberries,


strawberries 鈥?any combination (thawed)


2Tablespoons hazelnut coffee creamer


1(5 oz) package instant vanilla pudding mix


陆cup milk


1(14 oz) can sweetened condensed milk


1(8 oz) container frozen whipped topping, thawed





Directions:





1.Place half of cubed cake in bottom of large glass serving bowl. Layer half of the berries on top of the cake.





2.In a medium bowl, combine pudding mix, milk, condensed milk, coffee creamer, and 1 cup of whipped topping 鈥?stir well. Pour half the mixture over frozen berries.





3.Place the remainder of the cake on top of the custard. Layer remaining berries on top of the cake.





4.Pour the remaining custard mixture on top of the berries.





5.Top custard with remaining whipped topping

Here's my recipe for strawberry shortcake, it's always a hit!





2 or 3 of the premade pound cake loaves that you can buy in the bakery section of the grocery store.





2 or 3 pints of strawberries





sugar





vanilla





2 fresh lemons





2 8oz packages of cream cheese





2 16 oz boxes of powdered sugar/confectioners sugar





2 containers of cool whip





First wash and slice your strawberries and place them in the bowl with sugar, vanilla and fresh lemon juice to taste. Set them in the fridge and let them marinate while you prep the rest of the ingredients. Cube the pound cake loaves and put them to the side. Then take the two packages of cream cheese(make sure this is at room temperature) and beat it with your electric mixer until smooth(I also add 1 stick of butter per package of cream cheese, but that is totally optional, if you do it though you would want to beat it with the cream cheese) then you add both boxes of powdered sugar slowly until you have a nice smooth mixture(you may want to sift your powdered sugar first), top it off with two teaspoons of vanilla and lemon juice. Then take your cool whip and fold it into the cream cheese mixture until it is all mixed together. Now your ready to put it together. Start with a layer of the pound cake, then a layer of strawberries, then a layer of cool whip/cream cheese mixture. You should finish with the cool whip cream cheese mixture on top of course. You can also save a few fresh strawberries for garnish if you want to get fancy :) I use a really big deep bowl for my strawberry short cake, it's really great because you will end up with quite a few layers.

I would make rainbow fruit kabobs. Load up skewers with fruit in the colors of the rainbow (strawberries, cantalope, pineapple, honeydew, blueberries, blackberries or whatever you like) and arrange the skewers on a plate really pretty and mix up a fruit dip; something along the lines of a cream cheese, sour cream and raspberry jam mixture to dip them into or pick a dip from the following site;

If they are going to be in the car for an hour I would highly recommend putting at least the fruit dip in a cooler with some ice so it stays cold and maybe partially freeze the fruit so it's thawing on the road. Good luck and good eats!
LAYERED FRUIT SALAD:


Combine in large bowl, 8 oz block of cream cheese,


1/2 cup orange juice, 1/4 cup granulated sugar,


2 tbsp chopped fresh mint leaves, 1 tsp grated orange zest.


Fold in 2 cups of frozen whipped topping, thawed.


Combine in medium bowl 2 cups fresh sliced strawberries,


2 cups fresh blueberries, 2 cups seedless green grapes.


Spoon half of fruit mixture into serving bowl.


Spread half of cream cheese mixture on top of fruit.


Repeat with remaining fruit %26amp; cream cheese mixture.


Scatter 2 cups fresh raspberries over top layer.


Garnish with sprigs of mint. Serves 16 pot-luck style.


Needs to be kept in cooler chest, but not frozen.
Hollow out a watermelon to create a watermelon basket. The fill it with fruit salad. Very easy and should be fine in the car, you could always pop it in a cooler.





Or, a simple sponge cake with light whipped cream and stawberries, You could do mini shortcakes, a big one, or layer those components in a deep bowl (like a trifle). You could also add blue berries for more flavor and color!
You can cook gelatenous (sticky) rice in water or coconut cream. when it dries you can wrap it around some fruit.





Thai people traditionally steam the rice and fruitwrapped in banana leaves, but wrapping in plastic cling wrap is ok.

In gelatinous rice is not allowed you might use ordinary rice boiled to death.
I made this yesterday and it was delicious! I have a mulberry tree in my yard but I didn't have enough so I used mulberries, blueberries, and strawberries and it was delicious! I did use slightly less sugar than the recipe called for.





MULBERRY PIE

Pastry for 2 crust pie


4 c. fresh mulberries


1/4 c. water


1 c. sugar


3 tbsp. cornstarch


1 tbsp. lemon juice


1/2 tsp. cinnamon


1 1/2 tbsp. butter





Line 9 inch pie plate with pastry. Mix sugar, cornstarch and


cinnamon. Mix lightly through mulberries and water. Pour


berries into pastry lined pie plate. Dot with butter. Cover


with top crust which has slits cut in it. Bake until crust


is nicely browned and juice begins to bubble through slits


in crust. Serve slightly warm, not hot. Temperature: 425


degree (hot oven). Time: bake 35 to 45 minutes. Serves 8.
make a strawberry short cake. buy yellow cake, strawberries, whipped cream, and strawberry glaze (they sell it near the strawberry's in a bag).


cook the cake, use the cool whip as frosting, and put the glaze in the middle (cut the cake in half) and cover it in sliced strawberries!


they will LOVE you!!
