Easy potluck recipes?

I need a good easy recipe to feed an office full of people that is simple but great-tasting, and unique. Any help?Easy potluck recipes?
Graham Streusel Coffee Cake --





INGREDIENTS


1 1/2 cups graham cracker crumbs


3/4 cup packed brown sugar


3/4 cup chopped pecans


1 1/2 teaspoons ground cinnamon


2/3 cup butter or margarine, melted


1 (18.25 ounce) package yellow cake mix


1/2 cup confectioners' sugar


1 tablespoon milk








DIRECTIONS


Combine the first five ingredients; set aside. Prepare cake mix according to package directions. Pour half of the batter into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with half of the graham cracker mixture. Carefully spoon the remaining batter on top. Sprinkle with the remaining graham cracker mixture. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Combine confectioners' sugar and milk; drizzle over cake.

Banana Crumb Muffins --





INGREDIENTS


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon baking powder


1/2 teaspoon salt


3 bananas, mashed


3/4 cup white sugar


1 egg, lightly beaten


1/3 cup butter, melted


1/3 cup packed brown sugar


2 tablespoons all-purpose flour


1/8 teaspoon ground cinnamon


1 tablespoon butter








DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.


In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.


In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.


Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Annie's Fruit Salsa and Cinnamon Chips --





INGREDIENTS


2 kiwis, peeled and diced


2 Golden Delicious apples - peeled, cored and diced


8 ounces raspberries


1 pound strawberries


2 tablespoons white sugar


1 tablespoon brown sugar


3 tablespoons fruit preserves, any flavor





10 (10 inch) flour tortillas


butter flavored cooking spray


2 cups cinnamon sugar








DIRECTIONS


In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.


Preheat oven to 350 degrees F (175 degrees C).


Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.


Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Chicken Cordon Bleu --





INGREDIENTS


6 skinless, boneless chicken breast halves


6 slices Swiss cheese


6 slices ham


3 tablespoons all-purpose flour


1 teaspoon paprika


6 tablespoons butter


1/2 cup dry white wine


1 teaspoon chicken bouillon granules


1 tablespoon cornstarch


1 cup heavy whipping cream








DIRECTIONS


Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.


Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.


Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm

Sausage Jalapeno Poppers --





INGREDIENTS


2 (12 ounce) packages ground sausage


2 (8 ounce) packages cream cheese, softened


30 jalapeno chile peppers


1 pound sliced bacon, cut in half








DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C).


Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.


Drain sausage and place in a medium bowl. Mix with the cream cheese.


Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.


Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.

Beef Brisket on Buns --





INGREDIENTS


1/2 teaspoon ground ginger


1/2 teaspoon ground mustard


1 (5 pound) fresh beef brisket


2 cups water


1 cup ketchup


1/2 cup Worcestershire sauce


2 tablespoons brown sugar


2 teaspoons liquid smoke (optional)


1 teaspoon chili powder


18 sandwich buns





DIRECTIONS


Combine the ginger and mustard; rub over brisket. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325 degrees F for 2 hours.


Let stand for 20 minutes. Thinly slice meat across the grain. Place in a foil-lined 13-in. x 9-in. x 2-in. baking dish. In a bowl, combine the water, ketchup, Worcestershire sauce, brown sugar, Liquid Smoke if desired and chili powder; pour over meat. Cover tightly with foil; bake 3 hours longer or until tender. Serve on buns if desired.

Gary's Stuffed Mushrooms --





INGREDIENTS


12 large fresh mushrooms, stems removed


1 (6 ounce) package chicken flavored dry stuffing mix


1 (8 ounce) package cream cheese, softened


1/2 pound imitation crabmeat, flaked


2 cups butter


2 cloves garlic, peeled and minced


salt and pepper to taste


garlic powder to taste


crushed red pepper to taste








DIRECTIONS


Arrange mushroom caps on a medium baking sheet, bottoms up. Chop and reserve mushroom stems.


Prepare chicken flavored dry stuffing mix according to package directions.


Preheat oven to 350 degrees F (175 degrees C).


In a medium saucepan over medium heat, melt butter. Mix in garlic and cook until tender, about 5 minutes.


In a medium bowl, mix together reserved mushroom stems, prepared dry stuffing mix, cream cheese and imitation crabmeat. Liberally stuff mushrooms with the mixture. Drizzle with the butter and garlic. Season with salt, pepper, garlic powder and crushed red pepper.


Bake uncovered in the preheated oven 10 to 12 minutes, or until stuffing is lightly browned.

Crab Rangoon --





INGREDIENTS


1 quart oil for deep frying


1 (8 ounce) package cream cheese, softened


2 (6 ounce) cans crabmeat, drained and flaked


1/2 teaspoon garlic powder


1/4 teaspoon paprika


2 tablespoons water chestnuts, drained and chopped


1 (14 ounce) package wonton wrappers








DIRECTIONS


In a large, heavy sauce pan heat oil to 375 degrees F (190 degrees C).


In a medium bowl, mix cream cheese, crabmeat, garlic powder, paprika and water chestnuts.


Place approximately 1 teaspoon of the cream cheese mixture in the center of wonton wrappers. Moisten wrapper edges with water, fold over the mixture and pinch to seal.


In small batches, fry the wontons 3 to 5 minutes, or until golden brown.

Parmesan Spinach Balls --





INGREDIENTS


2 (10 ounce) packages frozen chopped spinach, thawed and drained


2 cups Italian-style seasoned bread crumbs


1 cup grated Parmesan cheese


1/2 cup butter, melted


4 small green onion, finely chopped


4 eggs, lightly beaten


salt and pepper to taste








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.


Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.

Chicken Wing Dip --





INGREDIENTS


2 (8 ounce) packages cream cheese, softened


3/4 cup pepper sauce, such as Franks庐 Red Hot庐


1 cup Ranch-style salad dressing


2 cups diced cooked chicken


1 cup shredded Cheddar cheese








DIRECTIONS


Preheat the oven to 350 degrees F (175 degrees C).


In a medium bowl, stir together the cream cheese and hot pepper sauce until well blended. Mix in the Ranch dressing, chicken and Cheddar cheese. Spread into a 9x13 inch baking dish.


Bake for 30 minutes in the preheated oven. If oil collects on the top, dab it off using a paper towel. Serve with tortilla chips.Easy potluck recipes?
I saw this recipe last night on line and it sounds wonderful:


Strawberry Fruit Kabob:


3 chocolate dipped strawberries


2 cubes of pound cake


Skewer and enjoy!





Pasta salad is easy, too:


Cook tri-color (or any) pasta


Add chopped colorful vege's (onion, tomato, cucumber, carrots, anything you like)


Add Kraft Italian Salad Dressing to taste


Toss, Chill, Serve





Fruit Salad is always a hit:


Watermelon, cantaloupe, grapes, fresh pineapple, any other fruit that is on sale or you like


Cube and toss fruit in large bowl or use the outside of the watermelon cut into a basket.


Put the top of the pineapple in the middle of the fruit bowl as a garnish.


It looks pretty and is always a hit. (Just make sure to use the pineapple top for visual appeal.)





Cherry Crisp


2 cans cherry pie filling


1 box yellow cake mix


2 stick butter (no margarine)


Spread cherries in bottom of 9x13 pan


Sprinkle cake mix over cherries


Pour melted butter over cake mix


Bake @ 350 until golden brown. (The darker the crispier)


Delicious and so very easy.
This is really easy everyone that I know LOVES it and it is best if you make the day before and put in the frig. I am sure people will ask for the recipe.


1 pond spagetti cooked according to box and cooled


1 can black olives sliced and drained


1 can of baby corns drained


1 stick peparoni sliced into bite size pieces


1 16oz. bottle Italian salad dressing


1 bottle of maccormick salad supreme it is in the spice aisle of your grocery store it is not liquid


1/4 cup parm cheese





Mix everything together and toss well and put in the frig. Only use 3/4 of the bottle of salad supreme though. and I usually only use 3/4 of the dressing and toss and put in the frig and then usually right before serving I add the rest of the dressing
I recommend this recipe quite often. It's great hot or cold and you can substitute the sausage with chicken, pork or seafood (I have used shrimp or scallops)





MEDITERRANEAN PASTA





1 package of Brown %26amp; Serve Sausage


录 tsp. Oregano


2 Onions (minced)


录 tsp. Salt


Minced Garlic (add to taste)


Dash of Pepper


1 tbs. Olive Oil


2 Tomatoes (seeded %26amp; cubed)


2 Zucchini (sliced thin)


Hot Cooked Vermicelli


陆 tsp. Basil Leaves


Grated Parmesan Cheese





Cook sausage in large skillet until brown. Remove, cut into 1/3鈥檚 and reserve. Add onions, garlic and oil to skillet. Cook until onions are soft. Add zucchini, basil, oregano, salt and pepper. Cook for 5 minutes more. Add tomatoes and sausage; cover and simmer 10 minutes more, stir occasionally. Serve over Vermicelli.
Here is the perfect salad pizza for a potluck, it sits out well, and there are never any leftovers.








2 (8 ounce) cans refrigerated crescent rolls


1 cup mayonnaise


1 (8 ounce) package cream cheese, softened


1 tablespoon dill weed


2 1/2 cups sliced vegetables (squash, mushrooms, carrots, radishes, cucumber,broccoli, what ever you like)


1/2 cup sliced ripe olives


3/4 cup shredded Cheddar cheese


3/4 cup shredded mozzarella cheese


Unroll the crescent rolls and place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Flatten dough to fit the pan, sealing seams and perforations. Bake at 375 degrees F for 10 minutes or until golden brown. Cool.


In a small mixing bowl, beat the mayonnaise, cream cheese and dill until smooth; spread over crust. Top with the vegetables of your choice. Sprinkle with olives and cheeses; press lightly. Cover and chill for at least 1 hour. Cut into squares.
CHEESY CORN FLAKE POTATOES





1 lg. bag frozen hash browns


1 onion, diced


1 can cream of chicken soup


2 sticks butter, melted


10 oz. sour cream


12 oz. grated cheddar cheese


Corn flakes


Salt %26amp; pepper





Put potatoes in the bottom of a 9';x13'; pan. Mix onion, soup, 1 stick melted butter, sour cream and cheese. Spread on top of potatoes. Put a layer of corn flakes on top of mixture. Drizzle remaining butter on top. Bake at 350 degrees for 30 minutes.








I usually buy the big turkey roasting pans and double the recipe, that way theres enough for everyone!





May also need to extend cooking time if starting wth frozen hashbrowns.
This is awesome; I've made this twice, and both times it's been a huge hit.





Buffalo Chicken Dip





4 boneless, skinless chicken breasts, cooked and shredded


1 12 oz. bottle Frank's Buffalo Sauce (or hot sauce -- but not tobasco!)


2 8 oz. packages cream cheese


1 16 oz. bottle of ranch or blue cheese dressing


8 oz shredded cheddar, monterey jack or a combo





Preheat oven to 350 degrees. in a 13x9 baking pan, combine shredded chicken with the hot sauce, spreading to form an even layer.





In a large saucepan over medium heat, combine cream cheese with dressing, stirring until smooth and hot. Pour mixture evenly over chicken. Bake uncovered for 20 minutes, then sprinkle with cheese and bake uncovered another 10 minutes. Let stand for 10 minutes before serving.





Serve with golden tortillas or fritos. Celery as a side.

INGREDIENTS


12 (10 inch) flour tortillas


1 (8 ounce) package cream cheese


1 head lettuce


1 (6 ounce) package sliced deli-style turkey


2 cups shredded carrots


2 cups minced tomato





Spread cream cheese evenly over the tortillas. Top the cream cheese with lettuce leaves. Arrange the turkey slices in even layers on top of the lettuce. Sprinkle the carrots and tomato over the turkey slices. Roll the tortillas into wraps. Cut the wraps diagonally into bite-sized pieces. Secure with toothpicks.
4 cups of grated cheeses you like.have 4 big boiled potatoes cut in rounds.cut lengthwise 4 zucchine,2 onions,4 red bell peppers.place on very non stick hot skillet with very little butter for 2 minutes,stirring.mix 2 cups half and half,one cup sour cream,add salt and pepper to taste-but u can flavor with any flavoring you like-ranch dip,green onion dip etc.-.in a baking dish place a layer of potatoes,add some cream mix, then layer mixed veggies,add some grated cheeses.go for another layer but do not cover with cheese this last layer. bake in oven for 20 minutes ,take out and add remaining cheese,bake for 15 minutes.ready!

People think I can cook now and I'm really just following directions.
Shredded BBQ Beef


I buy either pork butt or shoulder (butt is easier, no bone). Season with a bit of olive oil, salt, pepper, onion powder, garlic powder, brown sugar (or whatever you like) put in crock pot for about 3 hours(just eye ball it) Pour a can of Coke over it and some more brown sugar and go another hour or two. Take meat out and put in large bowl, drain juice from crock. When meat has cooled enough to work with, shred with two forks (or we cube up the meat and throw it in the food processor). When all meat is shredded put in bowl and mix with your favorite BBQ sauce (we love Sweet Baby Ray's). Mix well, return it to the crock, and heat through. Serve with buns and pickle slices.
greek pasta salad


6c cooked multi grain rotini


1%26amp;1/2 c diced cucumber


2 med tomatoes ,diced


2 oz feta cheese ,finely crumbled


1 med green bell pepper ,chopped


12 med pitted black olives,sliced


1/4 c chopped fresh dill


juice of 1/2 lemon


1/4 tsp salt


1/8 tsp black pepper





Mix all together in large bowl . chill untill


ready to serve .
pasta seems like a dish that everyone knows and loves, is simple and could feed an army. keep it simple like spaghetti %26amp; meatballs or make it more festive with roasted vegetables.

COLA CHICKEN

4 skinless, boneless chicken breasts


1 cup catsup


1 12oz. can cola (pepsi, coke, etc.)





Put chicken in a non-stick pan.


Mix together catsup and cola, pour over chicken.


Bring to a boil. Cover, reduce heat and cook 45 minutes.


(turning chicken a few times, while cooking...to prevent from sticking to pan)


Uncover, turn up the heat and continue to cook until the sauce


becomes thick and adheres to the chicken.


It turns into the most incredible BBQ sauce. Yummmm!





You can double the recipe and use more pieces of


chicken....wings...would be ideal...add some hot sauce....presto ';Hot Wings';!





I have used Ribs, just as good.





I tried this recipe with 'meatballs'....was equally


as good...served over rice.





I found another variation.....omit the catsup and add a small jar of Salsa (any variety).


I have tried using Salsa (omitting the catsup....not).


You'd think a recipe with only '3' ingredients couldn't be messed up....wouldn't you??


Well...while I was preparing to fix the 'Cola Chicken' recipe


using Salsa.....I was also trying to carry on a conversation with my


husband...(just proves...I can't do two things at once)....mixed Salsa %26amp; Catsup (before I realized I was supposed to leave out the catsup) %26amp; Cola........still turned out really tasty (to me)...might be a little sweeter than some of you like.





I fixed chicken wings, (using the above recipe)


but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





Finally....!! I fixed the 'SALSA' chicken......that's good , too.





Another (bright)idea.....I thought of trying......replace the


catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


Fixed the shrimp with cocktail sauce......eh...wasn't all that


great...was OK...probably won't be fixing it again.





Also tried beef stew cuts......that was pretty good.....I can see


myself making this again.


Served both over rice.....think the stew cuts would have been just as


good over noodles.





Gonna try some butterfly cut pork chopes鈥?.or boneless chops鈥r pork steaks鈥︹€hould be good!





Try little cocktail wieners/sausages鈥or appetizers鈥?.pork chops鈥?pork steaks. (Maybe Vienna Sausages??)











CRUNCHY ONION CHICKEN





1 1/3 cups French鈥檚 Original French Fried Onions


4 boneless skinless chicken breast halves


1 egg, beaten





LIGHTLY CRUSH:





Onions in a plastic bag.





DIP:


Chicken in egg





COVER:


With onion crumbs, press firmly to adhere to chicken.





BAKE:


Preheat oven to 400 degrees.


Place chicken on lightly greased baking pan.


Sprinkle with additional onion crumbs, if desired.


Bake for 20 minutes or until no longer pink in center.








Mushroom Chicken





4 boneless/skinless chicken breast (or any pieces you like)


1 can cream of mushroom soup.


1 can water





Place chicken in crock pot (or sauce pan for stove top cooking)


mix soup %26amp; 1 can of water together


pour over chicken


cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





Serve over noodles or rice or dressing....or???





POT ROAST


Your choice of beef or pork (to fit crock-pot)


1 pkg. dry Ranch dressing mix


1 pkg. dry Italian dressing mix


1 pkg. dry Brown Gravy mix


1 cup water


Put beef in pot.


Mix together all the dry mixes鈥?then add water 鈥our over meat and cover %26amp; cook on high 4-6 hours.


Until meat is tender.


The first time I mad it I didn鈥檛 have the Italian Dressing mix鈥?so I added a pkg. of Onion Soup Mix鈥?I have to say I liked that better.


If you use more water you might want to add more Brown Gravy mix鈥?to make a thicker sauce. Was gonna add


potatoes and carrots鈥ut never got around to it.








OLD SETTLER鈥橲 BEANS


INGREDIENTS:


1/2 lb. ground beef1/2 lb. bacon


1 chopped onion


Brown in skillet and drain excess grease.





ADD:


16 oz. can Red Kidney Beans (drained)


24 oz. can Pork %26amp; Beans (drained)


1/2 cup white sugar


1/2 cup dark brown sugar


1/4 cup Catsup


2 TBLS. Molasses


1/2 tsp. dry mustard





Mix Thoroughly !


Cook in a crock pot until...hot...hot...hot!








Kreamy Kool-Aid Pie





1-(6 g) package un sweetened Kool-Aid powdered drink mix


1-(14 oz.)can sweetened condensed milk


1-(8 oz)container Cool Whip frozen whipped topping, thawed.


1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)


Cool Whip for top (optional)





1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.


2. Fold in Cool Whip.


4. If desired, spread more Cool Whip on top.


5. Chill for a minimum of 4 hours.





I鈥檝e used: Strawberry鈥herry鈥emon-lime (Key-Lime Pie)鈥?Lemonade (Lemon Pie鈥ight add some yellow food coloring for a more lemony look.)

ROBERT REDFORD DESSERT





INGREDIENTS %26amp; INSTRUCTIONS FOR BOTTOM LAYER:


Melt 1 stick butter


Add 1/2 cup nuts and 1 cup flour.





Press into bottom of lightly greased 9 x 13 baking pan. Bake 20 minutes at 350 degrees.





MIDDLE LAYER:


Blend together 1 8oz. package cream cheese and 1 cup sugar. Fold in 1/2 small tub Cool Whip. Mix well.





TOP LAYER:


Mix together until mixture begins to thicken:


1 large package vanilla instant pudding %26amp; 1 large package instant chocolate pudding with 3 cups milk.





Spread on middle layer and chill to set. Spread remaining cool whip on top %26amp; garnish with nuts %26amp; grated chocolate if desired.








DIRT PUDDING





INGREDIENTS:


1 pound bag of Oreo鈥檚


1 large box of instant vanilla pudding


1 small container of Cool Whip


1 Tablespoon powdered sugar





INSTRUCTIONS:


1.) Crush 3/4 bag of Oreo鈥檚 and spread in 9 x 13 baking dish.


2.) Make pudding as directed on package.


3.) Add Cool Whip %26amp; sugar, spread over crushed Oreo鈥檚.


4.) Crush remaining Oreo鈥檚 and sprinkle on top of pudding mixture. Refrigerate.








Banana Pudding





I usually double the recipe....never any left-overs.





Ingredients:


Bananas


Use instant Banana pudding or vanilla pudding fix by directions on box.


Cool Whip...add to pudding mix thoroughly.


Vanilla wafers


Toasted coconut.





Line serving dish with a layer of vanilla wafers (a row up the sides of dish, also.)

2 whole graham crackers


Cool Whip





Spread a thin layer of Cool Whip on 1 whole cracker鈥?top with remaining cracker鈥?freeze.





Make several at a time.





Melt some chocolate and drizzle over top before freezing.
