I need recipes for your favorite potluck or casserole dishes for my family reunion.?

Creamy Chicken and Noodles


Prep: 10 min., Cook: 15 min.





1 (0.6-oz.) envelope Italian dressing mix


1 (8-oz.) package wide egg noodles


2 tablespoons butter, softened


3 cups chopped cooked chicken


1 cup whipping cream


1/4 cup freshly grated Parmesan cheese


2 tablespoons chopped fresh parsley





1. Remove 1 Tbsp. Italian dressing mix from envelope, and set aside; reserve remaining mix for another use.


2. Cook noodles according to package directions; drain well, and return noodles to pan.


3. Stir in 2 Tbsp. butter, and toss to coat. Stir in chopped chicken, next 3 ingredients, and 1 Tbsp. dressing mix. Cook mixture over medium-high heat, tossing to coat evenly, 5 minutes or until thoroughly heated. Serve immediately.


Yield: Makes 6 servings


VARIATIONS:


1.Chopped Ham and Peas: Stir in 8 oz. diced ham and 1 cup thawed frozen peas.


2.Southwestern Style: Omit Italian dressing and Parmesan cheese. Stir in 1 (10-oz.) can diced tomatoes and green chiles and 1⁄2 cup (2 oz.) shredded Mexican four-cheese blend.


3.Italian Style: Add 1⁄4 cup diced sun-dried tomatoes and 1 cup turkey pepperoni slices.

Shrimp Company Casserole





2 to 3 lbs. Shrimp, cooked, peeled, and cleaned


1 C. Rice, Cooked


1 C. Sharp Cheddar Cheese


1 can Mushroom Soup


1/2 C. Chopped Green Pepper


1/2 C. chopped Green Onions


1/2 C. chopped Celery


1 stick Butter


8 lemons, sliced very thin





Mix first four ingredients together. Sauté green peppers, green onions, and celery in butter. Add to shrimp mixture. Put into a long flat casserole and cover the top with lemon slices. Cook covered for about 20 minutes at 375ºF.

Deep Dish Taco Squares





2 cups biscuit mix


½ cup cold water


1 pound ground beef


½ green bell pepper -- chopped


2 Tbsp. chopped onion


1 pkg taco seasoning mix


1 (8-oz) can tomato sauce


1( 8-oz )carton sour cream


1 cup shredded sharp Cheddar cheese


1/3 cup mayonnaise or salad dressing


Paprika





Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2-inch baking dish. Bake at 375ºF for 9 minutes.





Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain well. Stir in tomato sauce and taco seasoning mix, spoon over crust.





Combine sour cream, cheese, and mayonnaise in a medium bowl; spoon over meat mixture. Sprinkle top evenly with paprika.





Bake at 375ºF, uncovered, for 25 minutes or until casserole is lightly browned. Cut into squares to serve.

KING RANCH CHICKEN CASSEROLE


1 large onion, chopped


1 large green bell pepper, chopped


2 tablespoons vegetable oil


2 cups chopped cooked chicken


1 (10 3/4-oz) can cream of chicken soup, undiluted


1 (10 3/4-oz) can cream of mushroom soup, undiluted


1 (10-oz) can diced tomato and green chiles


1 teaspoon chili powder


1/4 teaspoon salt


1/4 teaspoon garlic powder


1/4 teaspoon pepper


12 (6-inch) corn tortillas


2 cups (8 oz) shredded Cheddar cheese, divided





Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.





Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.





Bake at 350° for 30 to 35 minutes. Yield: Makes 6 to 8 servings





Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.

An all age favorite in my family is Hotdogs and honey BBQ sauce. Cut hotdogs in to 1-1/12'; pieces and place in a crockpot. Add the bbq sauce (I use Bull's Eye brand), stir and heat for a few hours , stirring occassionally. That's it! So simple but everyone who eats it wants the recipe.

Cheddar Beef Enchiladas





1-1/4 pounds ground beef


1-1/3 (1.25 ounce) packages taco seasoning


1-1/3 cups water


2-2/3 cups cooked rice


1-1/3 (16 ounce) cans refried beans


2-2/3 cups shredded Cheddar cheese, divided


13-1/2 (8 inch) flour tortillas


1-1/3 (16 ounce) jars salsa


1-1/3 (10.75 ounce) cans condensed cream of chicken soup, undiluted


In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in rice. Cook and stir until liquid is evaporated. Spread about 2 tablespoons of refried beans, 1/4 cup beef mixture and 1 tablespoon cheese down the center of each tortilla; roll up. Place seam side down in two greased 13-in. x 9-in. x 2-in. baking dishes.


Combine salsa and soup; pour down the center of enchiladas. Sprinkle with remaining cheese. Bake one casserole, uncovered, at 350 degrees F for 20-25 minutes or until heated through and cheese is melted. Cover and freeze remaining casserole for up to 3 months. Serves 8
Chicken Ritz Casserole





Ingredients:


5-6 chicken breasts, cooked


1 can cream of chicken soup


1 can cheddar broccoli soup


about 1/4 soup can of milk


1-1/2 c. sour cream


2 c. cooked minute rice (1 c. prior to cooking)


dash salt and pepper


30 to 40 Ritz crackers, crumbled


Butter


Cooking Instructions:


Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
This is so easy and really delicious. I made it for a pot luck last week and there wasn't a drop left. :) I use fresh, medium salsa rather than bottled, and also add 1/2 cup of the salsa to the meat mixture. I also add 1/2 cup crushed tortilla chips to the topping during the last 5 minutes.

My family went crazy for this sweet potato casserole I saw on Food Network. I don't like sweet potatoes, but this recipe was AWESOME!
