Potluck recipe on a budget?

I'm going to a potluck party this Sunday afternoon and need ideas for what to bring. It's going to be a group of 15-20 at most, and the hostess is going to be making grilled cream cheese-stuffed peppers. I'm a college student (as most of the guests will be, though of varying ages), so my funds are rather limited, but we are a fairly health-conscious group and so would like to bring something that's tasty and non-junk food. I'm leaning a bit toward handling the dessert end of things, but not sure what would work well for that?


Anyone got any ideas?

Buy or make an Angel Food cake; bring some Cool Whip and sliced strawberries to put on top. Very low fat, and relatively low in sugar, carbs %26amp; calories.....
A spinach, cranberry, mushroom, walnut, onion salad with a vinaigrette is always great. The flavors are perfectly matched with a raspberry vinaigrette.
Make a large bowl of fruit salad. Or bring a veggie plattter and veggie or spinach dip. Make a large pan of macaroni/tuna salad or potato salad.
Goggle budget meals. Lots of ideas.
Fruit Trifle





1-1/2 cups fat free milk


1 pkg of instant sugar free pudding (vanilla or white chocolate)


(Fold first 2 ingredients together)





1 cup fat free vanilla yogurt


6 oz fat free cream cheese


1/2 cup fat free sour cream


2 tsp vanilla extract


1 cup of fat free cool whip


(using a mixer beat these 5 ingredients together)





1 angel food cake


1 pint fruit (blueberry, strawberry, raspberry or blackberry)


1 carton fat free cool whip





Cut angel food cake into squares, using a trifle dish or deep bowl, place a layer of angel food on the bottom. Layer mix that was folded together, a layer of cool whip, then fruit. Cont to layer, fruit being last layer at the top.


People will not ever guess this is a low fat dessert, its yummy!!!!!!!!!!!!!!!!!! Looks pretty too








Chinese Chicken Salad


Dressing:


3 1/2 Tbsp. Soy Sauce


2 Tbsp. Vinegar


1 Tbsp. Veg Oil


1 Tbs. Sugar


1/2 Tsp. Garlic Powder


1/2 Tsp. Pepper





Salad:


2 c. torn lettuce


1 1/2 c. chopped cooked chiken


8 oz can sliced water chestnuts (drained)


1/2 c. julienne carrots


1/4 c. diagonally sliced green onions


1/4 c. chopped red cabbage


5 oz. chow mein noodles





In small bowl, whisk together dressing ingredients; set aside. In a large bowl, combine remaining salad ingredients, except chow mein noddles. Just before serving, toss salad w/dressing %26amp; top w/noodles.
I would gently suggest that you think of something other than dessert. My reason is simple, you'll find that at the great majority of these events, that's what most people bring. There will be a great selection of desserts!





My suggestion would be something along the salad line, since it is easy to make %26amp; transport and you don't have to keep it warm to too cold, etc. A couple of recipes are shown below %26amp; if you go to the websites, you can see pictures of them too. Very pretty!

Best Ever Wild Rice Picnic Salad





1 Package Uncle Ben鈥檚 long grain %26amp; wild rice (cooked, as directed on package %26amp; then chilled)


录 cup vegetable oil


2 tablespoons cider vinegar


录 cup onion, finely chopped


1 cup celery, sliced


5 radishes, sliced


1 cup cucumber, diced





Combine oil %26amp; vinegar, stir into chilled rice. Add onion %26amp; celery; mix well. Chill. Stir in radishes %26amp; cucumber before serving.





Serves about 6





Suggestion #2: If you have a large clear bowl, this would look great in that. Otherwise, pickup one of the Rubbermaid clear storage containers at the market. The 14 cup size should work well %26amp; can be used in future too! I would skip the bacon bits, as not needed.

12 servings, 1 cup each


4 cups torn spinach


1-1/2 cups KRAFT Shredded Mild Cheddar Cheese, divided


2 cups sliced fresh mushrooms


1 small red onion, sliced, separated into rings


2 tomatoes, chopped


1 pkg. (10 oz.) frozen green peas, thawed, drained


1/2 cup KRAFT Mayonnaise


1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream


1/4 cup chopped fresh basil


4 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled


LAYER spinach, 1 cup of the cheese, the mushrooms, onions, tomatoes and peas in 3-qt. serving bowl.


MIX mayo, sour cream and basil. Spread over salad, completely covering top of salad. Cover. Refrigerate at least 5 hours.


SPRINKLE with remaining 1/2 cup cheese and the bacon just before serving.





Be sure to bring something to serve your dish as well! It is a very helpful idea for the busy hostess, so she doesn't have to worry about that!






These are really easy to make and so good. They have no crust so they are a lot healthier and pretty inexpensive to make. But the generic cream cheese and preserves or store brand. You don't have to use pineapple, you can use any flavor. The pineapple is usually found as an ice cream topping








Miniature Cheesecakes








1 1/2 packages (8 oz size) cream cheese


1/2 cup sugar


2 eggs


3/4 tsp vanilla








Topping:


1 cup sour cream


1/4 cup sugar


1/2 tsp vanilla


strawberry or pineapple preserves





Let cream cheese soften in a medium size bowl; add 1/2 cup sugar, and cream together thoroughly.





Add eggs, on at a time, beating well after each addition.





Add 3/4 tsp vanilla and beat until smooth and creamy.





Place paper cupcake (foil if you have them) in a muffin tin and using a teaspoon, fill each one 2/3 full. Bake in a preheated 300 F oven 20 to 25 minutes. Cool 10 minutes (cakes will cave in slightly in center).





Make topping: In a small bowl, thoroughly mix sour cream, sugar and vanilla. Using a teaspoon top each with a small amount, enough to cover the top. Top with small amount of preserves in center of each cake. Return pan to oven and bake an additional 10 minutes. Makes about 2-3 dozen.

I am looking for recipe suggestions for a potluck at my infant son's daycare (for Halloween)...?

I didn't want to bring anything too sugary and I'd like to avoid egg whites, peanuts, and honey since infants aren't supposed to eat those ingredients. Does anyone have recipes that might be appropriate for these little guys - most will be ages 8 months to 1 year? Seafood cocktail dip(always a winner, not expensive and very tasty!!!)


Large pack of Louis kemp crab shredded(chop it small)


1 small can of canned crab drained(cheap is fine)


2 8oz Philadelphia Cream cheese softend


1 tablespoon of sour cream


2 jars seafood cocktail sauce(I like bennets, but use you favorite)


1/4 finely chopped green onion tops or chives


Box of town house or Ritz crackers


Now you can use shrimp instead of crab, the crab is just tastier to us.


Mix the drained crab n louis Kemp shredded crab till mixed well.


Mix cream cheese n sour cream till smooth, spread on a nice platter about 1/4 to 1/2'; deep, pour a jar of the cocktail sauce over the cream cheese you just spread, you may use mmore than 1 jar depending on how big your platter is, now sprinkle the crab over the top...lastly sprinkle green onion tops over the crab. Put crackers out with it.





Cocktail Wieners


1/3 c. brown sugar


1/3 c. ketchup


1/3 c. water


2 Tablespoons of whiskey


Simmer 15 minutes. Serve. If you have a slow cooker you can put them out in this on low to keep them warm.Potluck Recipe Ideas?

    1 bag of Semi Sweet Hersheys morsels baking chocolate

    Butter or margarine





    Heat the tortillas in the microwave with a moist papertowel for just a few minutes to get them soft.


    Melt the chocolate in a pot ( you can also use chocolate pudding if you want to)


    Cut the bannas into small pieces


    Put the tortilla in the fyring pan sprayed with pan and spread the chocolate if you use the melting chocolate, and then add the bannanas, fold or roll up into a burrito and drizzle chocolate and sprinkle powdered sugar.

    When it reaches a boil, dissolve the flour in, a little bit at a time until when it has thickened to desired consistency.

    2 cloves of garlic, peeled and finely sliced


    1 or 2 dried red chillies, crumbled


    1.5kg/3 1/2lb ripe tomatoes, or 3 x 400gr tins of good quality plum tomatoes


    a large handful of fresh basil leaves


    1 tablespoon red wine vinegar (optional)


    400gr/14oz dried orecchiette


    4 big handfuls of freshly grated Parmesan cheese


    3 x 150gr balls of mozzarella





    Preheat your oven to 200C/400F/gas 6 and put a large pot of salted water on to boil. To an appropriately sized pan add a couple of glugs of good extra virgin olive oil, your onion, garlic and chilli and slowly fry for about 10 minutes on a medium to low heat until softened, but without any colour. If you're using fresh tomatoes, remove the core with the tip of a small knife, plunge them into the boiling water for about 40 seconds until their skin starts to come away, then remove with a slotted spoon or sieve and remove the pan from the heat.





    Put the tomatoes into a bowl and run cold water over them, then slide the skins off, squeeze out the pips and roughly chop. Add your fresh or tinned tomatoes to the onion and garlic, with a small glass of water. Bring to the boil and simmer for around 20 minutes. Now put them through a food processor or liquidiser to make a loose sauce. Tear your basil leaves into the sauce and correct the seasoning with salt, pepper and a little swig of red wine vinegar.





    When the liquidised sauce tastes perfect, bring the water back to the boil. Add the orecchiette to the water and cook according to the packet instructions, then drain and toss with half of the tomato sauce and a handful of Parmesan. Get yourself an appropriately sized baking tray, pan or earthenware dish and rub it with a little olive oil. Layer a little pasta in the tray, followed by some tomato sauce, a handful of grated Parmesan and 1 sliced up mozzarella ball, then repeat these layers until you've used all the ingredients, ending with a good layer of cheese on top. Pop it into the preheated oven for 15 minutes or until golden, crisp and bubbling.

    Veggie Wraps- Take a pita bread or tortilla and stuff it with lettuce, cabbage, shredded carrots, almonds, and chow mein noodles.     Sausage Biscuit Casserole





    3 packets of Country Gravy mix


    1-2 pounds of country sausage


    10-15 biscuits


    13x9 casserole dish





    Cook the sausage like you are making ground beef, (drain the fat well)





    Make gravy separately





    Make biscuits then place them in rows on the casserole dish.





    Mix the gravy and sausage together and pour over the biscuits right before you go to work.

    INGREDIENTS:





    1 -1 1/2 cups chopped nuts (I used walnuts)


    24 frozen dinner rolls (I used Rhodes)


    1 pkg. butterscotch pudding (I used sugar-free instant)


    1 stick butter (melted)


    1 cup brown sugar (firmly packed)


    2 tbls. cinnamon





    INSTRUCTIONS:





    Lightly butter (wipe with paper towel) a 9'; x 13';baking pan (I


    used a glass Lasagna dish)


    Spread nuts evenly over bottom of pan, place rolls on top. (4


    across and 6 the long ways)


    Sprinkle the `dry' pudding mix over rolls %26amp; nuts.


    Combine the melted butter, brown sugar %26amp; cinnamon and drizzle


    over buns.


    Place waxed paper (that has been lightly sprayed with cooking


    spray %26amp; excess wiped away with paper towel) over top. Let rise


    overnight.


    Bake at 350 degrees for 30 minutes, until browned.


    (Second time I made these, I doubled sugar, butter, %26amp; cinnamon!)
    Homemade breakfast burritos with picante. You will need shredded cheddar 1 bag, 1 roll pork sausage, 10 flour tortillas, picante sauce, 1 dozen eggs, 4 T butter, 1 small diced white onion, 1 4 ounce can diced green chili's. Brown crumbled pork and drain. Add butter to skillet and 1 small diced onion to skillet. Cook until translucent over medium heat. About 5 minutes. Place 1 dozen lightly beaten eggs and can of diced green Chile's into skillet with onions and cook over medium heat until cooked through. Add sausage and combine. Place 2 to 3 T meat and egg mixture into each tortilla. Top with shredded cheese and a spoonful of picante sauce. Roll up. Place in baker. Bake at 325 covered for 20 minutes. Once at work can be heated in microwave individually for 1 to 2 minutes.
    Cheesy Sausage-Bacon Brunch





    1 lb sliced bacon


    1/2 lb sausage, cooked and crumbled


    2 tablespoons sugar


    1 1/2 cups Original Bisquick庐 mix


    1 1/2 cups milk


    4 eggs


    2 cups shredded Cheddar cheese (8 oz)





    1. Heat oven to 375掳F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In 12-inch skillet, cook bacon over low heat 8 to 10 minutes, turning occasionally, until crisp. Drain on paper towels. Crumble bacon; set aside. Cook sausage using same pan.


    2. Sprinkle sausage in baking dish. In medium bowl, stir Bisquick mix, milk and eggs until blended; pour over sausage. Sprinkle with cheese and bacon.


    3. Bake uncovered 30 to 35 minutes or until knife inserted in center comes out clean
    Overnight french toast is great, you make it the night before and bake it while you are getting dressed in the morning!

    Cream together the brown sugar and the butter or margarine. Add the almond extract.


    Sift and add flour to the creamed sugar mixture. Mix well.


    Separate the egg, and add the egg yolk to the dough. Mix again.


    Press into the greased sponge roll tin, and glaze with the lightly-beaten egg white. Sprinkle with flaked or slivered almonds.


    Bake approx 20 minutes. When cool, cut into bars.

    Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

    Directions


    1Preheat oven to 375F.


    2Mix together flour, sugar, walnuts, cinnamon, and butter in a bowl until crumbly.


    3Press 2/3 of mixture into an ungreased 9x9-inch baking pan.


    4Spread preserves over crust.


    5Sprinkle remaining crumb mixture over the top of preserves, patting mixture down lightly.


    6Bake at 375F for 20-25 minutes or until light golden brown.


    7Cool completely before cutting into bars.

    Ingredients


    3 Mars Bars


    90g butter


    3 cups rice bubbles


    200g melted chocolate (cooking or normal eating chocolate)








    Method


    Grease and line slice tin with baking paper


    Melt Mars Bars with butter and mix with rice bubbles.


    Pour mixture into tin.


    Melt chocolate and pour over slice.


    Let slice set in a cool place (or the fridge).


    Remove slice from tin and cut into pieces.

    A fruit platter is always good, especially if you prepare it ahead of time. Peel the oranges, rinse off the strawberries, wash the grapes, have a bowl of nuts nearby to go with the fruit and that's very nutritious as well as being attractive.

    1 cup all-purpose flour


    2 teaspoons garlic salt


    1 teaspoon paprika


    1 teaspoon ground black pepper


    1/4 teaspoon poultry seasoning


    1 (4 pound) whole chicken, cut into pieces


    3 cups vegetable oil


    1 cup chicken broth


    1 cup milk





    In a medium bowl, beat together 1/2 cup milk and egg. In a resealable plastic bag, mix together the flour, garlic salt, paprika, pepper and poultry seasoning. Place chicken in bag, seal, and shake to coat. Dip chicken in milk and egg mixture, then once more in flour mixture. Reserve any remaining flour mixture.


    In a large skillet, heat oil to 365 degrees F (185 degrees C). Place coated chicken in the hot oil, and brown on all sides. Reduce heat to medium-low, and continue cooking chicken until tender, about 30 minutes. Remove chicken from skillet, and drain on paper towels.


    Discard all but 2 tablespoons of the frying oil. Over low heat, stir in 2 tablespoons of the reserved flour mixture. Stirring constantly, cook about 2 minutes. Whisk in chicken stock, scraping browned bits off bottom of skillet. Stir in 1 cup milk, and bring all to a boil over high heat, stirring constantly. Reduce heat to low, and simmer for about 5 minutes. Serve immediately with the chicken. Serves 8.





    You can make mashed potatoes and mix some of the gravy with the mashed potatoes too - it's really yum !


    And if not, just make the fried chicken part.. it's really really good !

    Slow Cooker Scalloped Potatoes


    5 pounds potatoes, peeled and thinly sliced


    陆 cup onion, diced


    陆 teaspoon garlic powder


    录 teaspoon salt

    White sauce recipe (follows)





    Place potatoes in slow cooker. Add onion and mix with potatoes. Prepare white sauce, pour evenly over potatoes. Add seasonings.





    Cover and cook on high 4 hours. Can be topped with grated cheese.





    White Sauce


    4 tablespoons butter


    4 tablespoons all purpose white flour


    1 teaspoon salt


    1/4 teaspoon white pepper


    2 cup milk





    In saucepan, melt butter over low heat. Blend in flour and seasoning with wire whisk. Cook slowly, about 2 minutes, until mixture is smooth.





    Slowly add milk while stirring. Increase heat to medium and continue to stir until mixture comes to a boil. Cook one minute and remove from heat.
    Toast the bread and make bread crumbs season with salt. Take the chicken and dip it in the egg. Then bread the chicken in the crumbs. Then put the butter in a fry pan and brown the chicken. When chicken is browned put it on a baking dish and put pizza sauce on the chicken and bake at 350 or 400 for 20-30 min. You have chicken parmesan without the cheese. You can make the rice and put the chicken over it. Some of the best dishes are ones out of the top of your head.
    how about mix eggs and milk and slice chicken breast into small stripes and dip into the egg milk mixture then into a bowl of flour just season with parsley garlic salt pepper onion powder and or what u have for chicken flavoring and then pan bake or deep fry or pan fry in oil and make chicken stripes or add tabasco sauce to melted butter in the microwave and pour on the stripes for a bufffalo chicken effect

    Ingredients:


    1 cup (8 ounces) sour cream


    1 cup half-and-half cream


    1 cup chopped onion


    1 can (4 ounces) chopped green chilies


    1 teaspoon salt


    1/2 teaspoon pepper


    1 package (2 pounds) frozen shredded hash brown potatoes


    2-1/2 cups cubed cooked chicken


    2-1/2 cups (10 ounces) shredded cheddar cheese, divided


    Directions:


    In a large bowl, combine the sour cream, half-and-half cream, onion, chilies, salt and pepper. Stir in potatoes, chicken and 2 cups of the cheese.


    Pour into a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350掳 for 1-1/4 hours or until golden brown. Sprinkle with remaining cheese before serving. Yield: 6-8 servings. Editor's Note: Cooked turkey or ham can be substituted for the chicken.

    1 can (12 ounces) tuna, drained and flaked


    4 ounces cheddar cheese, cut into 1/4-inch cubes


    1/2 to 3/4 cup mayonnaise


    1/2 cup chopped celery


    1/4 cup chopped onion


    2 tablespoons chopped dill pickle


    1 tablespoon dill pickle juice


    1/4 teaspoon salt


    1/8 teaspoon each celery seed and pepper


    5 medium tomatoes, cored


    Bacon bits, optional


    Directions:


    In a bowl, combine tuna, cheese, mayonnaise, celery, onion, pickle, pickle juice, salt, celery seed and pepper. Chill. Cut tomatoes, not quite through, into quarters; place on individual plates and spread apart. Spoon 1/2 cup salad into each. Garnish with bacon bits if desired. Yield: 5 servings.
    You can use whatever cheese you have on hand for this:





    ONION CHEESE QUICHE





    If you use premade pie crusts, this recipe is a cinch! Use a Starfrit dicer or food processor to dice the onions. I put the second quiche in the freezer for another day.





    Pastry for 1 quiche dish OR 2 pie crusts





    3 large onions, diced


    2 tbsp. butter or margarine


    1 tbsp. flour


    4 oz. Swiss cheese, grated (1 c. grated)


    2 eggs


    2/3 c. milk


    1 tsp. salt


    Dash pepper and nutmeg





    Preheat oven to 375F. Saut茅 onions in melted butter or margarine over medium heat for about 10 minutes. Do not brown. Sprinkled with flour and mix well.





    Beat eggs, milk, salt, pepper and nutmeg. Add onions and half of cheese. Place in pastry shell or pie crusts. Top with the rest of the cheese.





    Bake at 375F for 30-35 minutes, until golden. A knife inserted into the center should come out clean.








    HASH BROWN QUICHE





    3 c. shredded hash brown potatoes (3 c. grated potatoes)


    1/3 cup butter, melted


    seasoning salt to taste


    1 c. diced mushrooms (optional)


    1/4 cup chopped onion


    1 cup shredded Cheddar cheese


    2 eggs


    1/2 cup milk


    salt and pepper to taste

    Salad Dressing: Hidden Valley Ranch packet, Mayo


    Topping: Shredded Cheddar Cheese %26amp; Crumbled Bacon (I buy the hormel Bacon bits-easier)





    Just layer and put the salad dressing on and topping! Use as much or as little to taste. You can also substitue other veggies, like peppers, if you want, no rules on this one! It looks fantastic in a glass bowl!








    Mexican Layer Dip





    Refriend Beans mixed with half packet taco seasoning


    Sour Cream


    Lettuce


    Diced Tomaotes


    Green Onions





    Layer all together and eat with tortilla chips.








    BLT Dip





    Sour Cream, 12 oz


    1 tsp if onion powder


    Lettuce

    Crumbled bacon





    Mixed sour cream and onion pwder


    Layer on bacon. Then lettuce, then tomatoes.

    Buy a bag of salad...I prefer Romaine. Add fresh basil leaves, Mozzerella cheese (Cubed or shredded) and grape tomotoes (cut in half). Any itialian dressing works well with this one. People rave about this salad at my parties!

    I'm in love with doctorgrandmas strawberry shortcake recipe. Not only is it tasty, but it's different and it's a healthy option with some fat free whipping cream on top. Of course you can buy your cream for convince, or you can make it with their cal free sweetener, which is really good too.





    Option 2 - easy and delicious, but not health food - 1, 1, and 1 cake.


    Ingredients:


    1 box yellow cake mix


    1 C butter


    1 c pecans or other nut. Walnuts are good on this too.


    1 can cherry pie filling


    1 can pineapple(just one below chunked - shredded?)





    Pre-heat oven to 350 degrees





    In a cake pan(11x13 or whatever they are;) add the can of cherries and can of pineapple to the pan, UN-DRAINED.





    Spread dry cake mix over the combined cherries and pineapple.





    Spread chopped nuts over dry mix. I like a cup and a half of nuts on mine. Does that make me nutty;)





    Drizzle melted butter over all. Don't worry about coverage here. Just try to drizzle it evenly over all main areas of the cake.





    Cook that sucker for 1 hour and, oh my gosh....one great and easy pot luck offering.





    I gurantee you that neither DoctorGrandma's strawberry shortcakes or 1, 1 %26amp; 1 will be left over!
    I, too, love to try different things and came up with this recipe:





    2 lbs potatoes, peeled and cubed


    2 med. onions, cut in half then in eighths


    Minced garlic


    Lemon-pepper


    Salt


    Butter flavored vegetable spray





    Rinse and drain potatoes, but still slightly damp. Spray the inside of a large casserole dish. Place half the potatoes in the dish, top with half the onions, minced garlic to taste. Spray all. Sprinkle with lemon-pepper (the more you use the tarter the taste) and salt. Repeat with rest of veggies, spray and seasonings.


    Cover with foil and bake for 45 min. to an hour. If you want them kind of brown, leave uncovered last 15 minutes, but watch carefully!





    I know it sounds like a strange combination, but you'll be surprised at how good they are!!

    Here are several that people have loved when I have brought them to potlucks at work.





    MANGO SALSA





    12 roma tomatoes, seeded, diced


    1 red onion, diced


    5 jalapenos, diced(add 1/4 habenero pepper for extreme heat)


    2 mangos, diced


    1 cup finely chopped cilantro


    1 tsp salt


    1 tsp ground cumin


    1 tsp chilli powder


    1/2 cup olive oil


    1/2 cup freshly squeezed lime juice


    1 tbsp tobasco or other pepper sauce





    MIx all of the ingredients together. Refridgerate for 1 hour and then serve. Keep in mind that the salt will draw out the juices from the ingredients and so the mixture may have to be drained from time to time. Save the juice for Bloody Mary's or Caesar.

    PAPAYA SALSA





    4 c. peeled, diced papaya (or mangoes)


    1/2 c. finely diced Bermuda onions


    1 jalapeno pepper, seeded %26amp; chopped


    1/4 c. coarsely chopped fresh coriander


    1 tbsp. Kosher salt


    1/4 c. fresh lime juice





    Combine all ingredients in glass bowl. Let sit in refrigerator at least 2 hours.

    PEACH SALSA





    3 firm peaches (about 1 lb.) - 1 pound of canned peaches can be substituted


    1 tbsp. lemon juice


    2 ripe tomatoes (about 1/2 lb.)


    6 large green onions


    1 tbsp. canned jalapeno peppers, chopped


    1 tbsp. cilantro, coarsely chopped (fresh coriander) - (optional)


    12 tbsp. good quality olive oil


    6 tbsp. sherry vinegar


    2 tbsp. honey





    Dip peaches into boiling water and then peel the skins. Cut peaches into thin strips, discarding pits. Toss with lemon juice. Dip tomatoes into boiling water, then peel and seed them. Cut into medium julienne strips. Combine peaches and tomatoes. Add onions, peppers and cilantro, if using. Mix. Whisk together oil, vinegar and honey. Pour over other ingredients. If using within several hours, no need to refrigerate; otherwise cover and refrigerate.

    SALSA GUACAMOLE





    Guests will rave about this combination of fire roasted salsa and guacamole -- you'll make it again and again!





    Salsa:





    1 can (14.5 oz) Muir Glen® organic fire roasted or plain diced tomatoes, well drained


    1/4 cup chopped onion


    2 tablespoons chopped fresh cilantro


    1/4 teaspoon coarse salt (kosher or sea salt)


    1 clove garlic, finely chopped


    1 small fresh jalapeño chile, seeded, finely chopped





    Guacamole:





    3 ripe large avocados (about 1 1/2 lb) pitted, peeled


    2 tablespoons fresh lime juice


    1/2 teaspoon coarse salt (kosher or sea salt)


    1/2 teaspoon red pepper sauce


    1 clove garlic, finely chopped





    In medium bowl, stir together salsa ingredients.


    In another medium bowl, place avocados; coarsely mash. Stir in remaining guacamole ingredients. Spoon guacamole into shallow serving bowl; top with salsa.





    Serve with tortilla chips as desired.





    Makes 12 servings (1/4 cup each).





    Tip: Look for avocados that are firm, but yield to gentle pressure. If they are not quite ripe, place avocados in a paper bag, and let ripen at room temperature.

    1/2 onion, minced

    Ingredients


    6 ounces lean ground beef


    1/3 cup finely chopped onion


    1 clove garlic, minced


    1/2 teaspoon ground cumin


    1/8 teaspoon ground red pepper


    1/2 cup chopped pimiento-stuffed green olives


    1/4 cup tomato sauce


    2 tablespoons golden raisins


    1 recipe Empanadita Pastry


    1 egg


    1 tablespoon water





    Directions


    1. For filling, in a large skillet, cook beef, onion, and garlic until beef is brown. Drain off fat. Stir in cumin and red pepper. Cook and stir for 1 minute. Stir in olives, tomato sauce, and raisins. Set aside.





    2. Place 1 rounded teaspoon of the filling in the center of each dough round. Moisten edge with water; fold in half, sealing edge with tines of a fork. Prick dough several times. Place on ungreased baking sheet.





    3. Stir together the egg and water; brush onto empanaditas. Bake in a 425F oven for 15 to 18 minutes or until golden. Makes 36 empanaditas.





    4. Empanadita Pastry: For pastry, in a large bowl, stir together 3 cups all-purpose flour and 1/4 teaspoon salt. Using a pastry blender, cut in 3/4 cup shortening until mixture resembles cornmeal. Add 1/2 cup milk and 1 beaten egg; stir until mixed.





    Turn dough out onto a lightly floured surface; knead for 10 to 12 strokes. Divide dough in half. Roll one portion of the dough to 1/8-inch thickness. Cut into 3-inch rounds; re-roll scraps and cut enough additional rounds to make 18 total. Repeat with the remaining dough portion.








    5. Make-Ahead: Prepare as directed except do not bake. Place empanaditas in a single layer on a baking sheet; freeze until firm. Transfer to a freezer container. Seal, label, and freeze for up to 2 months. To serve, line a baking sheet with foil; coat with nonstick cooking spray. Place frozen empanaditas on prepared baking sheet. Bake, uncovered, in a 350F oven about 30 minutes or until golden.

    Sweet and Sassy Meatballs 64 meatballs Start to Finish: 30 minutes


    Ingredients


    1 16-ounce can jellied cranberry sauce


    1 18-ounce bottle barbecue sauce


    2 1-pound packages frozen cooked meatballs, thawed (32 per pound)





    Directions


    1. For sauce, in a large skillet stir together cranberry sauce and barbecue sauce. Cook over medium heat until cranberry sauce is melted, stirring occasionally.





    2. Add meatballs to sauce. Cook, uncovered, for about 10 minutes or until meatballs are heated through, stirring occasionally. Serve immediately or keep meatballs warm in a slow cooker on low setting to serve. Makes 16 servings.





    3. Make-ahead directions: Prepare as directed in Step 1. Stir in frozen or thawed meatballs. Place in an airtight container. Cover and chill for up to 24 hours. To serve, heat meatballs and sauce in a large skillet over medium heat until heated through, stirring occasionally.





    4. Chipotle-Sauced Meatballs: Prepare as above, except substitute one 12-ounce bottle chili sauce for the barbecue sauce and stir in 3 to 4 tablespoons finely chopped canned chipotle pepper in adobo sauce.





    5. Hawaiian-Sauced Meatballs: Prepare sauce as above, except substitute one 8-ounce can crushed pineapple, undrained, for the cranberry sauce.Looking for easy quick recipe for potluck?

    1/2 C. butter


    1 C. flour


    1 tsp baking powder


    1 tsp baking soda


    1 C sugar


    1/2 tsp salt


    1 C. whole milk


    1 can ( 21 oz) peach pie filling





    Place butter in 13 x 9 pan . Bake at 350 until melted.


    Combine flour and next four ingredients. Stir in milk. Pour batter over butter. Spoon pie filling over batter. Do not stir!

    Earthquake Cake





    1 C. rough chopped pecans (says to toast but I don't)


    1 C. coconut


    1 box German or Regular Chocolate cake mix


    1 8 oz. cream cheese softened


    1 box powdered sugar


    1 stick softened butter





    At the bottom of a greased 9X13 pan, spread pecans, then coconut. Mix the cake mix per package instructions and pour over the nuts and coconut. Blend softened cream cheese, powdered sugar and butter and dab onto top of batter.





    Bake 50-55 Minutes. Cake cracks down the middle like an earthquake.





    Top with ice cream or whipped cream...it is delicious just plain too.

    HOT CHICKEN SALAD





    Mix well:


    1 can cream of chicken soup


    1 Cup Sour Cream


    1 Cup Mayonnaise





    Add:


    1/2 Cup chopped almonds


    1/2 Cup chopped Scallions


    2 Cups diced celery


    2-3 Cups of pre-cooked chicken, coarsely chopped


    2 Tbsp. chopped pimentos


    2 tsp. of lemon juice





    Mix well and spoon into a buttered 9X13” baking dish





    Topping:


    2Tbsp. melted butter


    ½ cup of either crushed corn flakes, potato chips, Ritz crackers, or chow mein noodles....mixed with melted butter





    Bake 30 minutes at 350ºF...then add topping and bake 15 minutes more.

    Lynn's Broccoli Rice Casserole





    ½ cup chopped onion


    ½ cup chopped celery (*I will often leave out if I have none)


    4 T. margarine


    2 cups cooked rice


    1 (10½ oz) can cream of mushroom soup


    2 (10-oz) pkg. frozen chopped broccoli, barely cooked and drained


    1 (8 oz) jar Cheese Whiz (*I will often use a chub of Kraft Garlic Cheese or Tostitoes Nacho Cheese, whatever I have around)


    1 4-oz) can water chestnuts, diced





    Saute’ onions and celery in margarine. Mix all ingredients. Put into a greased 2-qt. baking dish. Bake at 350ºF for 25 minutes or until bubbly. Serves 8. Enjoy!!

    1 12 pz can white shoe peg corn drained


    1 16 oz can French cut string beans drained


    1/2 cup celery chopped


    1/2 cup onion chopped


    1 2 oz jar pimentos chopped

    1/2 cup sharp Cheddar cheese, grated


    1 10 3/4 oz can cream of celery soup


    1/2 tsp salt


    1/2 tsp pepper





    Topping:


    1 cup Ritz cracker crumbs


    1/2 stick butter, melted


    1/2 cup slivered almonds





    Mix all ingredients except topping. Place in 1 1/2 qt. casserole. Sprinkle topping over casserole.


    Bake at 350 for 45 minutes. Serves 8.

    Pasta salad-everyone likes pasta salad. Or they should.





    1 tablespoon olive oil


    2 tablespoons salt


    1 pound pasta, small tubes or shells


    3/4 cup extra virgin olive oil


    1 cup cubed Mozzarella cheese


    3/4 cup black olives


    2 medium tomatoes, peeled, seeded, and diced


    1 large red onion, diced


    3 pickling cucumbers or kirbies, peeled and diced


    2 bunches fresh oregano, leaves only, chopped


    1/3 cup red wine vinegar


    3 dashes hot sauce


    Salt and freshly ground black pepper to taste





    Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil, and pasta, and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cool, transfer to a bowl, and toss with 1/4 cup extra virgin olive oil.


    Mix all remaining ingredients in a bowl. Toss with pasta, adjust seasonings, and Enjoy!!!!
    Tamale Pie





    Depending on how many people will be eating, this will serve 6


    bake a pan of corn bread let cool and crumble in a bowl, cook 2 lbs of ground beef or ground turkey on stove top till done, I usually add some diced onions and bell pepper to mine. Drain then add 2 packs of taco seasoning to it and one can of diced tomatoes drained(I use Mexican blend) one can of whole Cornell corn drained, 1/2 cup mild cheddar cheese, 1/4 cup crumbled corn bread. mix together. in a separate glass baking dish take 1/2 of the corn bread and put it in the bottom of the dish and mash down as to make a bottom crust, pour meat mixture into dish and top with the rest of the corn bread, sprinkle top with cheddar cheese and bake in 350 oven for 30minutes enjoy.
    Cherry-Chocolate Scones


    1 large egg


    3 cups flour


    1/4 cup sugar or Splenda Sugar Blend for Baking


    1 tablespoon baking powder


    1/2 teaspoon salt


    1/2 cup cold butter (1/4 pound)

    16 ounces tri-colored rotini pasta


    20 medium olives, sliced


    2 green onions, sliced


    8 ounces shredded Parmesan cheese


    1/4 cup extra-virgin olive oil

    1/4 cup chopped walnuts

    2 (3 ounce) packages instant pistachio pudding mix


    3 cups cold milk


    1/4 cup maraschino cherries

    1. Mix flour, walnuts, and butter or margarine. Spread into the bottom


    of a 9 x 13 inch pan. Bake at 350 degrees F (175 degrees C) for 20 to

    Chocolate dipped pineapple





    Slice a whole fresh pineapple in round slices and then cut each slice into 6 or 8 pie shape pieces.


    Melt Hersheys special dark chocolate chips in a double boiler or in the microwave (works best in a double boiler)


    Holding the pineapple by the rind dip in chocolate and place on waxed paper to firm up. You can sprinkle Heath bits on the top.





    This is absolutely fantastic if you like pineapple. Most people will ask what it is. Just tell them to try a piece. I brought 2 containers of it to work for a party and at first no one would try it. After I talked a couple of people into trying it, it disappeared.
    There is always room for Jell-O and you can do it with or with out the fruit. My aunt makes a 2 color mold -just pour red jello into a bunt pan - let set 2 hours then top with green jello- leave over night soak a minute in hot water and turn onto a plate serve with cool whip and you have a cheap-festive-easy hit!

    You could make trifle. All you need is some plain cake (either cake you made yourself or a pre-bought pound cake), berries, jello, custard (you can buy this premade or in powder form that you add milk to - in the US it's called 'Bird's English Dessert Mix'), whipped cream and shaved chocolate.





    Get a bowl and layer pieces of pound cake at the bottom. Place some berries over that, then pour over cooled custard. Then chopped up jello, another layer of cake and custard and jello, then whipped cream, berries and chocolate shaving to decorate.

    1-1/2 cups onion, finely chopped (1 large)


    5 medium beets


    1/2 cup carrot, chopped (1 small)


    5 tsp tomato paste


    16 cups chicken stock


    2 large potatoes


    1 medium cabbage head


    1 cup green bell pepper, chopped


    3 Tbsp sugar


    1/3 cup lemon juice, fresh squeezed


    1 tsp salt


    1/2 tsp ground black pepper


    1 clove garlic, minced


    1 tsp fresh dillweed, chopped








    Instructions


    Peel and julienne raw beets to yield 4 cups. Peel and cube potatoes to yield 2 1/2 cups. Finely chop cabbege to yield 6 cups.





    Heat oil in a large skillet over medium-high heat. Add onion and saute until browned, about 5 to 7 minutes.





    Add beets and carrot. Saute, stirring constantly, for 10 minutes.





    Stir in tomato paste. Remove from heat and set aside.





    In a large stock pot, bring chicken stock to a boil over high heat. Add potato and cook for 3 minutes. Add cabbage and continue boiling for 5 minutes.





    Add reserved beet-tomato paste mixture, green pepper, sugar, lemon juice, salt and black pepper. Reduce heat to a simmer and cook for 15 minutes.





    Remove from heat. Stir in garlic and dill. Serve hot.

    An easy one--Vegan Shephard's Pie.


    chop up two large onions and about three cloves of chopped garlic, and sautee them in a large(very large) pan with olive oil.


    Add about 16 ounces of chopped fresh cremini mushrooms.


    When the mushrooms get all watery, add about a package and a half of Boca frozen meat crumbles(Must be Boca, MorningStar Farms' is NOT vegan).


    Add a bunch of dried thyme, some ground coriander, and then put in as many frozen peas and corn and carrots as you like.


    Add about 3-4 cups of vegetable broth that has been mixed with about a half cup of flour, and simmer.


    meanwhile, make a bunch of mashed potatoes (potato flakes work fine).


    Once the ';beef'; mixture is a bit thicker, pour it into two casserole dishes.


    Cover the mixture with the mashed potatoes, and bake for about 25 minutes or until the mashed potatoes are just turning golden.

    Glazed Peach Pie





    INGREDIENTS:


    1 9-inch pie shell, baked


    1 quart sliced fresh peaches, excess liquid drained


    3/4 cup water


    1 cup sugar


    3 tablespoons cornstarch


    1 teaspoon vanilla


    2 teaspoons lemon juice


    1 tablespoon butter


    1/8 teaspoon salt


    sweetened whipped cream or whipped topping





    PREPARATION:


    Mash 1 cup of the peaches. Add water and cook four minutes. Mix sugar and cornstarch; add to the fruit mixture. Cook until thick and clear. Add vanilla, lemon juice, butter, and salt. Let cool. Arrange remaining peach slices in the cooled pie shell.


    Pour cooled peach glaze mixture over the sliced fruit. Chill. To serve, top with whipped cream or whipped topping and a few small peach slices, if desired. Or, serve with vanilla ice cream.

    Preheat oven to 350 degrees F. Grease a 6 1/2 cup capacity ring mold. Sift together flour, baking soda, cinnamon, allspice and salt; set aside. Beat butter and brown sugar with an electric mixer until light. Add eggs, one at a time, mixing well after each addition. Stop Mixer and add pumpkin, syrup and vanilla. Mix in on low speed. Add dry ingredients and fold in with a rubber spatula. Transfer batter to prepared pan. Bake 30-35 minutes. Cool in pan for 5 minutes then carefully lossen and place on a wire rack over waxed paper. Meanwhile, prepare glaze. Sift confectioners' sugar into a medium bowl. Add remaining ingredients and mix until smooth. Spoon over warm cake, letting glaze drip down sides. Cool completely.
    this is easy and everyone loves it. You dont have to worry about leftovers cuz it will be gone.





    Ugly Duckling Pudding Cake





    1 pkg. yellow cake mix


    1 pkg. lemon instant pudding


    1 16 oz. can fruit cocktail with juice


    1 cup shredded coconut


    4 eggs


    1/4 cup oil


    1/2 cup brown sugar


    1/2 cup chopped nuts





    Blend all ingredients except brown sugar and nuts. Beat 4 minutes at medium speed.


    Pour into a greased and floured 13 x 9 inch pan. Sprinkle with brown sugar and nuts.


    Bake at 325 for 45 minutes or until cake springs back when lightly pressed and pulls


    away from sides. Cool 15 minutes. Spoon hot glaze over warm cake.

    Well for a pot luck people may want something easy to grab and go, so individual servings will work best. Maybe cookies or cupcakes. I always think that fudge is SO easy to make, and people love it. You can get those little individual papers, and make it plain, or fancy. It's cheap and easy. I use the recipe right on the jar of Fluff!
    I have an excellent dessert that is so easy and makes allot and everyone loves it.


    1 box white cake mix


    2 box's room temp cream cheese


    2 cups confecotioners sugar


    1 tub cool whip


    4 cans of comstock or any brand cheerie pie filling


    You need 2 13 x 9 cake pans I usually just but the aluminum one's in the store then make your cake accoring to box and then seperate your cake into the two pans the cake will be thin then bake in the oven till done. It usually only takes about 20 minutes because they are thin but just check them then let them cool.


    Mix together the cream cheese, sugar then the coolwhip then split evenlly over the two cakes spread to cover the top then take you cheeries and put two cans on each cake and spread out then put in the frig till cold and serve. It is so good and it is also very light.

In large bowl, combine eggs, sugar, flour and baking powder; blend well. Stir in lemon juice. Pour mixture over warm crust. Bake at 350 F. for an additional 20 to 30 minutes or until top is light golden brown. Cool completely. Sprinkle with powdered sugar; cut smaller square bars

    2. In a medium bowl, cream sugar and shortening together. Beat in eggs, then stir in the blueberry puree. Sift together the all purpose flour, whole wheat flour, baking soda and salt; stir into the blueberry mixture. Finally, stir in the chopped almonds.


    3. Drop dough by heaping teaspoons onto the prepared cookie sheets. Bake for 13 to 15 minutes in the preheated oven. Cool on the baking sheet or remove to cool on wire racks.
    Keep at hand some homemade strawberry sorbet, some meringues and any ice cream.


    Make parfaits:

Cook your torts or pasta of choice, rinse in cold water and drain ~ toss right away with a little olive (or any kind you like) so it doesn't stick and start adding stuff. Pick your favorite stuff and your favorite bottled Italian dressing if you don't want to make your own ~ there are so many good ones on the market nowadays.


    I like to add:


    Celery


    Slivered red onion


    Pimento or roasted red bells


    Olives (any kind you like)


    If choosing Calamatas, a crumbling of Feta is nice.


    Beans ~ any kind. I toss in a combo, whatever I have ~ Kidney, garbanzo, cannelini, black, even fresh or canned green or wax. (steamed of course)


    Fresh chopped parsley for colour and brightness.


    Fresh toamtoes can be good, but get rid of the juice and seeds.

    1 12-oz. jar roasted red peppers, rinsed, drained, cut into thin strips


    1 12-oz. jar marinated artichoke hearts, drained, coarsely chopped


    1 cup diced Muenster, brick or Provolone cheese


    1 cup mushrooms, sliced


    1/2 cup chopped red onion


    1/3 cup chopped fresh basil


    2/3 cup Caesar or Italian salad dressing


    Freshly ground black pepper


    Sliced pepperoncini peppers (optional)





    Prepare pasta according to package directions. While pasta is cooking, combine pepper strips, artichoke hearts, cheese, mushrooms, onion and basil in a large bowl. Drain pasta; rinse with cold water. Drain well and add pasta and dressing to bowl; toss well. Cover; refrigerate at least 1 hour before serving. Sprinkle with freshly ground black pepper and sliced pepperoncini peppers before serving, if desired.

    Caesar Ravioli Salad


    Serving Size : 4





    1 9 oz pkg cheese ravioli


    2 cups cherry tomatoes -- halved


    1 medium cucumber -- thinly sliced


    1/2 cup purple onions -- chopped


    1/4 cup black olives -- sliced


    1/4 cup fresh Parmesan cheese -- grated


    1/2 teaspoon black pepper -- freshly ground


    3/4 cup Caesar salad dressing


    4 cups Romaine lettuce -- shredded





    Cook ravioli according to package directions; drain. Rinse with cold water; drain. Combine ravioli and next seven (7) ingredients. Cover and chill. Serve over lettuce, if desired.

    Greek Pasta Salad


    Serving Size : 6





    6 ounces dried mostaccioli pasta (about 2 cups)


    4 plum tomatoes, chopped


    1/2 of a medium cucumber, halved lengthwise and sliced


    2 green onions, sliced


    3 tablespoons sliced pitted ripe olives


    1/4 cup olive oil or salad oil


    1/4 cup lemon juice


    1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed


    1 tablespoon snipped fresh oregano or 1 teaspoon dried oregano, crushed


    1 tablespoon anchovy paste (optional)


    3 cloves garlic, minced


    1/8 teaspoon salt, 1/8 teaspoon pepper


    1/2 cup crumbled feta cheese (2 ounces)





    In a large saucepan cook the pasta in boiling, lightly salted water according to package directions; drain. Rinse with cold water; drain again.





    In a large bowl toss together the cooked pasta, the tomatoes, cucumber, green onions, and olives.





    For dressing, in a screw-top jar combine the oil, lemon juice, basil, oregano, anchovy paste (if desired), garlic, salt, and pepper. Cover and shake well. Drizzle over pasta mixture; toss gently to coat.





    Cover and refrigerate for at least 2 hours or overnight. Before serving, add the feta cheese; toss gently to combine. Makes 6 to 8 servings.
    Tortellini with chicken. You can cook the tortellini. Add Alfredo sauce after melted -heat in a skillet,add mushrooms, sliced onions, a little salt, butter, and diced chicken.It is great-we sell it at work.

    3 cups penne pasta, cooked, drained and cooled

    TOSS all ingredients in large bowl.

    Best Chicken Pasta Salad





    2 boneless, skinless chicken breast halves


    3/4 cup steak sauce


    1 (12 ounce) package fusilli pasta


    2 cubes chicken bouillon


    1 Vidalia onion, diced


    2 avocados - peeled, pitted and diced


    1 cup halved cherry tomatoes


    1 cup Ranch-style salad dressing


    DIRECTIONS


    Preheat an outdoor grill for high heat. Place breasts into a glass baking dish and marinate in steak sauce for 15 to 60 minutes.


    Grill chicken until no longer pink and the juices run clear. Remove from grill, and chop into bite-size pieces.


    To a large pot of boiling water, add bouillon cubes and pasta. Cook pasta until al dente. Drain, and rinse under cold water.


    In a large bowl, combine chicken, pasta, onion, avocados and tomatoes. Mix in salad dressing, cover, and refrigerate until chilled.
    COLD TORTELLINI APPLE SALAD


    3 tablespoons concentrated apple juice (you can get this frozen)


    3 tablespoons light corn syrup


    1 teaspoon cider vinegar


    2 teaspoons firmly packed brown sugar


    1/8 teaspoon garlic salt


    Dash pepper


    1 package refrigerated cheese tortellini (9 ounce)


    2 cups chopped apples


    2 cups shredded salad greens


    1 cup of manadrin orange slices (canned)


    1/2 cup thin sliced celery


    1/4 cup sliced green onions


    2 tablespoons pine nuts





    Combine apple juice concentrate, corn syrup, vinegar, sugar, garlic salt and pepper. Cover and refrigerate. Cook the cheese tortellini according to package directions. Drain and cool thoroughly. In large mixing bowl combine tortellini and remaining ingredients. Toss gently with apple juice dressing and serve immediately.
    Tortellini Salad


    1 lb tortellini, cooked


    1/4 lb boiled ham, julienne cut


    1/4 lb provolone cheese, julienne cut


    10 pitted black olives, drained, and diced


    1/2 cup roasted red peppers, drained and diced


    1 small red onion, diced


    1 bunch fresh parsley, chopped


    Dressing


    1/4 cup wine vinegar


    3/4 cup olive oil


    3/4 teaspoon oregano


    1/8 teaspoon basil


    1/2 teaspoon salt


    1/4 teaspoon pepper





    Dressing:. (Make this 1 day in advance.)


    Mix all ingredients together and blend well. Store in the refrigerator overnight.





    Salad:.


    Put all Salad ingredients in a large bowl, use one cup of salad dressing and mix.

    Mexican Pasta Salad Recipe





    8 ounces medium shells, uncooked


    2 teaspoons olive oil


    1/2 teaspoon ground cumin


    1 (15 ounce) can black beans, rinsed and drained


    1 (11 ounce) can whole kernel corn, drained


    1 red bell pepper, cut into thin strips


    3/4 cup sliced green onions


    1 (2 1/4 ounce) can sliced black olives


    3/4 cup fat free mayonnaise


    1/2 cup fat free sour cream


    1/4 cup salsa


    2 tablespoons fresh cilantro, minced


    Cook pasta, drain and rinse under cold water. Toss with oil and sprinkle with cumin and add salt to taste. Layer pasta, beans, corn, bell pepper, green onions and olives in a large glass bowl. Combine mayonnaise, sour cream, and salsa and mix well. Spread mixture evenly over top of pasta salad, sprinkle with cilantro, cover and refrigerate overnight.

    2 cups enriched white rice


    1 tablespoon extra-virgin olive oil, once around the pan


    1 tablespoon butter


    1 pound boneless, skinless white or dark meat chicken


    3/4 pound andouille, casing removed and diced


    1 medium onion, chopped


    2 ribs celery, chopped


    1 green bell pepper, chopped


    1 bay leaf, fresh or dried


    Several drops hot sauce or 2 pinches cayenne pepper


    2 to 3 tablespoons (a handful) all-purpose flour


    1 (14-ounce) can diced tomatoes in juice


    1(14-ounce) can or paper container chicken stock or broth


    1 teaspoon (1/3 palmful) cumin


    1 rounded teaspoon (1/2 palmful) dark chili powder


    1 teaspoon (1/3 palmful) poultry seasoning


    1 teaspoon Worcestershire sauce


    1 pound medium shrimp, raw, deveined and peeled (ask for easy peel at fish counter)


    Coarse salt and black pepper


    Chopped scallions, for garnish


    Fresh thyme, chopped for garnish





    Cook rice to package directions.


    Place a large, deep skillet over medium high heat. Add oil and butter to the pan. Cube chicken and place in hot oil and butter. Brown chicken 3 minutes, add sausage, and cook 2 minutes more. Add onion, celery, pepper, bay, and cayenne.


    Saute vegetables 5 minutes, sprinkle flour over the pan and cook 1 or 2 minutes more. Stir in tomatoes and broth and season with cumin, chili, poultry seasoning, and Worcestershire. Bring liquids to a boil and add shrimp.


    Simmer shrimp 5 minutes until pink and firm. Remove the pot from the heat and place on a trivet. Ladle jambalaya into shallow bowls. Using an ice cream scoop, place a scoop of rice on to the center of the bowlfuls of jambalaya.     Antipasto Salad





    8 oz. Rotini or Spaghetti Noodles


    4 oz hard salami, diced


    1 small red onion, thinly sliced


    1 cup whole pitted ripe olives8 oz. fresh mushroom, sliced


    ½ cup Italian dressing


    1 tabs vegetable oil


    1 cup celery, diagonally sliced


    1 cup cherry tomatoes, halved


    ½ cup diced green peppers


    1 tsp. salt


    ¼ tsp. black pepper





    1. Marinate salami, onions, olives and mushrooms with Italian dressing.


    2. Cover and refrigerate for 3 hours.


    3. One hour before serving, cook noodles according to directions.


    4. Toss celery, tomatoes, green pepper, salt, pepper and marinated vegetables together.


    5. Refrigerate 30minutes.


    6. Garnish with Romaine lettuce and serve.


    7. Makes 10 servings.








    Ground Beef and Sausage in Red Beans and Rice





    6 cups uncooked rice


    1 pound polish sausage


    1 teaspoon cayenne pepper


    2 pounds ground beef


    ¼ cup chopped onion


    2 cans Kidney beans, drained


    1 can Pinto beans, drained


    1 can Pork and Beans, undrained








    1. Prepare rice in large pot per directions.


    2. Cut sausage into 1-inch chunks and then quarter the chunks.


    3. Cook sausage in large skillet until lightly browned. Season with cayenne pepper to taste before transferring to pot with rice.


    4. Reserve grease and sauté ground beef for 5 minutes over medium-high heat. Reduce heat and stir in rice along with onions.


    5. Sauté for t5 minutes more.


    6. Drain well and return mixture to pot.


    7. Stir in kidney beans, pinto beans and pork %26amp; beans with rice mixture already in pot.


    8. Add a little water, if necessary, and simmer.


    9. Yields 15 servings.





    Farmhouse Sausage Chili





    1 pound roll pork sausage


    1 onion, chopped


    2 cans (15 oz) diced tomatoes


    1 can Chicken Broth


    1 can (15oz) tomato sauce


    1-2 Tablespoons maple or pancake syrup


    1 ½ teaspoons sage


    2 teaspoons cumin


    ½ teaspoon black pepper


    3 cans Kidney Beans, drained








    1. In large skillet, brown sausage and onions; drain


    2. Add diced tomatoes, broth, tomato sauce, maple syrup, cumin, sage and black pepper; stir until well until well blended.


    3. Simmer for 20 minutes.


    4. Add beans and simmer for additional 15-20 minutes.


    5. Serve topped with shredded cheddar cheese.





    Macaroni can be added if desired.
    I have a great jello recipe that is awesome. I have brought it for pot lucks at work before. And if you want to make it healthy, and suitable for diabetics you can as well. I will give the recipe for non diabetics. If you choose to make it suitable for diabetics, just substitute with sugar free, diet and light ingredients.





    Cherry Coke Salad





    I pkg. cherry Jello


    1 can cherry coke


    1 can cherry pie filling


    1 container Cool Whip





    Make Jello as directed on box, but instead of the cold water, substitute with the can of cherry coke. Mix together. Then add the can of cherry pie filling and mix thoroughly. Put in the refrigerator. As it is starting to set, stir it again to ensure the cherries are mixed throughout (other wise they will settle at the bottom).


    When fully set, put the Cool Whip on top.





    (My favorite part of this is that the cherries will soak in the cherry coke and kind of give a ZING when you bite into them. It is awesome and something my family always has around the holidays due to someone requesting it!!!!)





    Another easy recipe that went over VERY well at my last potluck was a 7 layer taco dip. My family always called it a ';walking taco';


    You will need 2 cans refried beans, 1 container sour cream (big container), 1 jar taco sauce (just the plain red taco sauce, like Ortega), Lettuce, tomatoes, black olives and cheese


    1 or 2 bags of tortilla chips





    On a cookie sheet spread the refried beans


    on top of that spread the sour cream


    then pour the taco sauce over the sour cream


    then put lettuce to cover, tomatoes, black olives and cheese. I tend to leave the black olives off, but put them in a bowl on the side.

    scoop up with chips and enjoy!

    CHICKEN TACO SOUP


    2 cans Chicken Broth


    1 can Kidney beans


    1 can Rotel


    1 cup White Rice


    1 can Chicken Breast


    1 cup Cheddar, Shredded





    I use my crock-pot for this one.


    Put in all ingredients except cheese and rice. Let it cook for like 30 minutes then put in rice. When rice is done. Serve. Sprinkle with cheese and dip it with tortilla chips.
    Portuguese Chicken





    4 all-purpose potatoes, such as russets, peeled and cut into quarters


    4 carrots, peeled and cut into large pieces on a diagonal


    3 ribs celery, cut into large pieces on an angle


    1 large onion, cut into large chunks


    1 cup dry white wine


    2 teaspoons sugar


    1 teaspoon salt


    1 tablespoon extra-virgin olive oil, eyeball it


    2 cups chicken broth


    3/4 pound chorizo, cut into 1 1/2 inch slices on an angle


    4 pieces poached cooked chicken, sliced on an angle into 1-inch strips


    1 cup tomato sauce


    1/4 cup chopped flat-leaf parsley


    Crusty Portuguese bread or other chewy, farm bread, for passing at the table





    Place potatoes, carrots, celery and onion in a pot. Pour in wine, add sugar, salt, and oil. Add 2 cups of chicken broth. Cover pot and bring to a boil. Reduce heat and simmer 15 minutes.





    While vegetables cook, brown chorizo in a small nonstick skillet over medium high heat.





    If your leftover chicken was frozen, defrost in microwave. If the leftovers were refrigerated, continue with recipe method as below.





    Remove the cover from the vegetables and add chorizo to the vegetables. Stir in tomato sauce. Set cooked chicken into the pot and heat through, 5 minutes. Adjust seasoning. Ladle Portuguese Chicken into shallow bowls and garnish with parsley. Serve with crusty bread for dipping.
    Here are several and I never have left overs when ever I bring these dishes to a potluck!





    2002 Salt Lake City Olympic Baked Beans

    1 lb. hamburger


    1 large can red kidney beans


    1 large can pork and beans


    1 large can crushed pineapple


    1 red pepper, chopped


    1 green pepper, chopped


    1 medium onion, chopped


    2 Tbs. barbeque sauce


    2 Tbs. Worcestershire sauce


    2 Tbs. liquid smoke


    2 Tbs. backstrap molasses





    Brown the hamburger with the red and green peppers and onions in a 12” Dutch oven, then add the rest of the ingredients.


    Simmer for 15 minutes, stirring occasionally. Serves 8


    Collen and I used this recipe for an event in which we catered during the 2002 Winter Olympic Games in Salt Lake City.





    Sweet %26amp; Sour Pineapple Meatballs

    1 lb. ground beef


    4 oz. breakfast or Italian sausage


    ¼ c. fresh bread crumbs


    2 large eggs


    ½ c. chicken flavored rice pilaf, cooked


    1small can crushed pineapple, undrained


    Salt and pepper to taste





    Sauce:





    1 c. catsup


    ½ c. rice vinegar or cider vinegar


    ½ c. water


    1 c. sugar


    1 Tbs. corn starch + 2 Tbs. water





    Combine and mix together the first 6 ingredients including salt and pepper, with your hands. Mix well. Form into 2 inch meat balls and bake in Dutch oven at 375o for 35 to 45 minutes, until brown.





    Combine in a small sauce pan, catsup, vinegar, water, and


    sugar. Heat over medium heat and bring to a simmer. Mix corn starch and 2 Tbs. water to make a slurry. Stir into sauce to thicken, remove from heat. Serve over meatballs. Double this for a potluck!





    Serves 4 to 6





    Chipotle Apple Pecan Cake





    3 cups all purpose flour


    2 tsp. cinnamon


    1 ½ tsp. nutmeg


    1 tsp. baking soda


    1 tsp. chipotle pepper powder


    ¾ tsp. ground ginger or 1 tsp. fresh grated


    ½ tsp. white pepper


    ¼ tsp. kosher salt


    1/8 tsp. ground cloves


    1 ½ cup vegetable oil


    1 ¾ cup Splenda® or xylitol (substitute same amount of sugar for regular diets)


    3 large eggs


    1 Tbs. vanilla


    3 cups sweet-tart apples, peeled, cored, and diced


    1 cup roasted pecans, chopped





    Spicy Caramel Glaze


    ½ cup packed brown sugar


    ¼ cup butter


    ¼ cup heavy whipping cream


    ¼ to ½ tsp. ground chipotle powder


    1 tsp. vanilla





    Lightly butter and flour a 10” Camp Chef UDO (ultimate Dutch oven) or use a 10” bunt pan, Set aside. In a large bowl, combine dry ingredients and gently stir to combine ingredients. In another bowl combine oil and sugar or Splenda® and beat with a hand mixer. Add one egg at a time beating well after each egg has been added. Beat in vanilla, chipotle, and fresh ginger. Slowly add as much or the 3 cups of flour as you can. Stir in remaining flour, apples and pecans. Spoon batter into Dutch oven or bunt pan and


    bake at 325° for about 1 ½ hours or until inserted toothpick pulls out clean. Cool cake 25 minutes in a the Dutch oven or 10 minutes in a Bunt pan: invert on a baking rack. While the cake is cooling prepare the caramel glaze; combine brown sugar, butter, cream, and chipotle powder in a 8” Dutch oven. Bring to boiling, stirring occasionally. Boil gently for about 2 minutes remove from heat and add vanilla. Let stand 1 hour 15 minutes, then drizzle cooling cake with sauce. Spoon sauce drippings from cake back onto cake. Cool completely before serving. Serves 16
