I need some potluck recipe ideas!!?

Potluck Devil Eggs





20 min 15 min prep





6 eggs


3 tablespoons Miracle Whip


1 teaspoon brown mustard


1/2 teaspoon sugar


1 pinch salt %26amp; pepper











1. Place eggs in medium saucepan.


2. Cover eggs with water.


3. Boil eggs for 3-4 minutes.


4. Cool %26amp; peel eggs.


5. Slice eggs in half. Scoop yolk into bowl. Place whites aside.


6. Mash yolks WITH sugar, salt %26amp; pepper.


7. Blend yolks, miracle whip %26amp; mustard to smooth.


8. Fill whites with yolk filling.


9. Cover %26amp; chill in refrig. for 2 hours.

Pasta With Bacon, Mushroom %26amp; Caramelised Onions





40 min 10 min prep





250 g bacon, pieces


250 g sliced mushrooms


2 red onions, cut in half %26amp; sliced


minced garlic (to taste)


thyme


spaghetti (or any of the long ribbon style pastas)


crumbly cheese (feta, ploughmans cheddar, anything that crumbles nicely)


butter











1. In a large frypan, fry the bacon, then set aside.


2. Melt butter in the same pan and then cook the onions until they have caramelised.


3. Add the mushrooms, garlic and thyme/herbs and the bacon again and reduce the heat to low.


4. Cook your pasta and then, using tongs or a spathetti spoon, add it to the pan with the bacon mixture in it. Do not drain as the liquid will help moisten the whole.


5. Serve with the cheese crumbled over the top.

Peanut Lover's Brownies





35 min 20 min prep





1/2 cup butter, softened


3/4 cup all-purpose flour


1/2 cup graham cracker crumbs


1/4 cup sugar


1/2 cup salted peanuts, chopped





BROWNIE LAYER


3/4 cup butter, cubed


4 (1 ounce) unsweetened chocolate squares, chopped


4 eggs


2 cups sugar


2 teaspoons vanilla extract


1 cup all-purpose flour











1. Line a 13 in x 9 in x 2 in baking pan with foil; grease the foil.


2. In a small mixing bowl, combine the butter, flour, cracker crumbs and sugar; press into prepared pan.


3. Bake at 350 for 10-12 minutes or until set.


4. Cool on a wire rack.


5. Sprinkle peanuts over crust.


6. In a microwave, melt the butter and chocolate; stir until smooth.


7. In a mixing bowl, combine the eggs, sugar, vanilla and chocolate mixture.


8. Add flour; mix well.


9. Spread over crust.


10. Bake for 30-40 minutes or until a toothpick inserted near the center comes out clean.


11. Cool on a wire rack.


12. For topping, warm peanut butter for 30 seconds in a microwave.


13. Gradually fold in whipped topping; spread over brownies.


14. Refrigerate for 1 hour.


15. Sprinkle with chopped peanut butter cups.


16. Using foil, lift brownies out of pan; remove foil.


17. Cut into squares.


18. Store in refrigerator.

Chicken Vermicelli





50 min 30 min prep





1 (16 ounce) package thin spaghetti or vermicelli


1 green bell pepper, seeded and chopped


1 onion, chopped


salt and pepper


1 tablespoon minced garlic


2 tablespoons all-purpose flour


1 (10 ounce) can diced tomatoes with green chilies


2 cups skim milk


1 tablespoon worcestershire sauce


1 cup frozen green peas


4 cups boneless skinless chicken breasts, cubed


1 1/2 cups reduced-fat cheddar cheese, grated











1. Break pasta into 3 or 4 inch pieces. Cook according to package directions.


2. In a large non-stick pot coated with non-stick cooking spray, saute the green pepper, onion and garlic until tender.


3. Mix in the flour.


4. Add the tomotoes, milk, and worcestershire sauce. Mix well. stir until mixutre comes to a boil and thickens.


5. Lower the heat mix in the green peas, mixing well.


6. Add the pasta, cheese, chicken.Mix well and heat through. Transfer to a 3 quart baking dish (we used a 9x13) coated with non stick cooking spray.


7. TO PREPARE AND EAT NOW: Preheat oven to 350. Bake for 20 minutes. It's ready when it's bubbly.


8. TO FREEZE: Do not bake before freezing. Cool to room temperature, wrap, lable and freeze.


9. TO PREPARE AFTER FREEZING: Remove from freezer to defrost fully. Bake for 30-40 minutes in a 350 oven which has been preheated.I need some potluck recipe ideas!!?

A absloute favortie is the Puerto Rican Rice...


Arroz Con Gandules








It's easy - give it a try.





2 cups short grain rice (rinsed) - long grain will work too





4-5 cups of hot water - appx.





陆 cup ready made sofrito (or you can blend a combination of greenpeppers, cilantro, onions, tomato, sazon packets and adobo in a blender... this is what ';sofrito'; bascially is)





16 ounce can of gandules (cooked green pigeon peas)





2 tablespoons of alcaparrado (cappers and olives mixed together)





1 packet of Sazon with achiote ( Can find this at many Latin Food Stores)





1 can tomato sauce





3 tablespoons of oil





Salt %26amp; pepper to taste





In a medium size caldero (pot) add the oil, tomato sauce, alcaparrado, sofrito and sazon. Cook over medium heat for 4 minutes. Add all other ingredients, and enough water to cover the rice 1'; above the rice line. Start with 1 teaspoon of salt stir and keep adding and mixing well until you are satisfied with the taste. Bring to a boil and cook over high heat until most of the water is absorbed. Once the water has been absorbed, stir gently from bottom to top - once or twice only, cover and turn the heat down to low. Cook for 30 minutes or until the rice is tender.





Stirring the rice after it has begun cooking may cause it go get sticky or ';amogollao.';





Any rice that sticks to the bottom of the pot is called ';pegao'; and is crispy and tasty and a favorite of all true Puerto Ricans. However, not everyone is skilled is making pegao - it is an art. To make great pegao make sure to use plenty of oil. Cook for about 10 minutes longer so the pegao gets crispy and keep your eye on it. Each time you cook rice - check to see how long it takes to make pegao just the way your family likes it. Finally - if you want a lot of pegao - use a bigger caldero which, of course, will have a larger bottom surface.

just about any kind of casserole is good, also pasta dishes (lasagna, etc etc) hot or cold salads........
Show up empty handed, with luck no one will notice and you'll get to eat without the stress.
Take a crockpot and buy pre-cooked frozen meatballs... add in even amounts of ketchup and grape jelly. Keep hot! Yummy!
Put a pork butt roast in your crock pot, on low for about 4 hours, put seasonings on it, including some brown sugar. After about 2 hours pour a COKE on it. After 4 hours, take it out and shredded it up. Drain the juice from the crock, return the shredded meat to the crock and add your favorite BBQ sauce, mix well, and heat through. Take to your pot luck with a bunch of buns and watch it disappear.





Deviled eggs are always a crowd pleaser and very easy. Use your food processor to whip up the filling.





For dessert Scotcharoos:





In a large pan over low heat melt:


1 Cup of Sugar


1 Cup of Light Corn Syrup (Karo)


When the melt together and come to a slow boil stir in


1 1/2 cup of smoother peanut butter


mix together, let it just start to bubble, remove from heat


Stir in 6 cups of Rice Krispies





Put that mixture in a 9x13 pan and smooth out the top and let it cool. When cool: in a smaller sauce pan over LOW heat melt together 1/2 bag of semisweet chips and 1/2 bag of butterscotch chips, when melted pour this over the bars.


Let cool and cut and serve.


These are awesome and always a big, big hit.
