Christmas potluck lunch recipes?

We're having a potluck lunch at work and I want to be the person that brings the dish everyone raves about. I'm terrible at baking desserts and things, so I want to bring a finger-food appetizer or entree dish. Any suggestions are welcome!

Thank you!!!Christmas potluck lunch recipes?

Cucumber Appetizers

1 pack of small rye cocktail bread

1 pack of cream cheese

1 packet of Hidden Valley Ranch dressing

1 Cucumber sliced thin

Dill

Mix the cream cheese with 1/2 packet of the dressing packet.

spread this on rye bread. Top with a slice of cucumber and top with a little dill.

Spinach dip in a round bread

Flautas

2 to 3 pounds of cooked chicken shreadded

1 jar of picante

2 to 3 packs of corn tortillas

oil

Fry the corn shells in oil just to make plyable and put a few tablespoons of shreadded chicken mixture on a shell and roll up. Transfer the rolled up tortillas to a baking sheet and cook in a 400 degree oven until crisp. You can cut them in half before cooking if you want them as more of an appetizer. Serve with additional picante. The only thing is they do not microwave well. You would want them heated in an oven.

Mastocholli is a good side to bring. It is cheap to make and everyone like it.

My favorite dish to take to potlucks is Potato Casserole:

1 bag frozen hash brown style potatoes

1 can cream of mushroom soup

1 can cream of chicken soup

1 pint sour cream

1 2-cup bag shredded cheddar cheese

1 cup melted butter

3 cups smashed corn flakes

Mix potatoes, soup, sour cream, cheese, and 1/2 cup butter. Spread evenly in casserole dish, top with remaining melted butter and corn flakes. Bake at 350 for about 40 min.

I usually make the casserole up the night before, then throw it in the oven when I get up in the morning. My husband calls this ';Crack in a pan'; and it's always been a hit at potlucks and family dinners!

If you would like to bring a dessert that doesn't require baking and is impossible to mess up:

Easy Peanut Butter Fudge

1 8oz jar creamy peanut butter

1 jar vanilla frosting

Put both ingredients in a bowl and microwave for 5 min. Stir well, then smooth mixture in casserole dish. Let cool completely (can take several hours, so this is also one you can do the night before) cut into pieces and serve.

How about a party pizza dip?

I'm sure if you googled this recipe you would find tons of variations.

However, my recipe consists of:

Mix a 250 g block of cream cheese with 1/2 - 3/4 c of real mayo. You need enough mayo to make a nice dipping consistency.

Spread over a 12'; round pizza pan or a nice dish approximately the same size.

Top with cocktail sauce or chili sauce

Sprinkle:

chopped tomatoes, green peppers, green onions on top.

Then add either chopped shrimp or crab meat over top.

Top with a mix of shredded cheddar/mozza

Serve with nice crackers and enjoy
If you can keep it warm, I love to make a Olive Cheese Bread.

1 Pound Monterrey Jack Cheese, Shredded

1 Cup Mayo

1/2 Stick Of Butter, Softened

1 8 oz Jar Green Olive with Pimentos, Chopped

1 8 oz Can Black Olives, Chopped

3 Green Onions, Diced

Pepper, to Taste

Mix everything together and than spread it on a French Loaf, split in half.

Bake at 375 for about 25 minutes or until brown.
