Paula Deen Taco Salad

Difficulty: Easy

Prep Time: 10 minutes

Yield: 6 to 8 servings

2 ripe tomatoes, diced

1/2 pound sharp Cheddar, diced (shredded)

1 large onion, diced

1 head iceberg lettuce, washed, drained and shredded

1 pound lean ground beef, browned, crumbled and drained

1 cup salad dressing (recommended: Catalina)

1 (7-ounce) bag taco flavored chips, crushed

1 cup salsa (taco sauce)

Tortilla chips, to serve

Combine the tomatoes, cheese, onion, lettuce, and ground beef in a large bowl. Add the salad dressing and mix well. Just before serving, add the taco chips, tossing to combine with other ingredients. Top each serving with salsa. Serve with tortilla chips.

Serve within a few hours adding the tortilla chips only at the last minute. Any longer and the lettuce gets soggy lettuce.

This is super easy, relatively inexpensive, and it's even healthy. Try to get fruits in JUICE rather than SYRUP. (I made up the name just for your occasion!)

Heavenly Fruit Salad

Large can peach slices, drained

Small can mandarin oranges or clementines, drained

1 single serving container of vanilla yogurt

1 tablespoon of instant vanilla pudding MIX (dry powder)

Combine the yogurt and pudding mix until smooth. Stir together with the fruit. Add more pudding mix to thicken if necessary. Can be made ahead and kept in the refrigerator for several days - may need to add a bit more pudding mix. Double the recipe for a larger group.

TOMATO ASPIC

4 cups tomato juice

2 cups chicken stock

1/2 teaspoon lemon rind

1 teaspoon Worcestershire sauce

1 teaspoon salt

3 envelops unflavored gelatin

3/4 cup water

1 cup diced celery

In a large saucepan, heat tomato juice and chicken stock until hot. Stir in lemon rind, Worcestershire sauce and salt.

In a small bowl, combine gelatin with water. Set for 5 minutes. Stir in hot tomato mixture. Add celery.

Pour into ring mold or individual decorative molds.

Refrigerate to set. Dip mold in hot water for a few seconds. Unmold on platter or plates.

You can add other veggies aside from celery. Apparently this is great diet food, but quite frankly the whole thing sounds gross. United Church ladies love it, though!
Heavenly Ham Casserole

6 med potatoes, sliced thin

1 med. onion chopped

1 lb. ham, cubed

1 cup cheese, shredded (cheddar)

1 can cream of mushroom soup

Paprika

Put 1/2 potatoes, then 1/2 onion, then 1/2 ham and cheese, repeat with rest of potatoes/onions/ham/cheese.

Spread soup over top so air doesn't get to potatoes if possible. Sprinkle with paprika.

Cook on low for 8-10 hours.

Cracker Chicken

INGREDIENTS:

24 butter crackers, such as Ritz

1/4 cup grated Parmesan cheese

1/2 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

10 small, skinned chicken drumsticks or about 1 1/2 pounds boneless, skinless chicken breasts cut into 1-inch-wide strips

2 large eggs

2 tablespoons honey

1 tablespoon water

1. Heat the oven to 400掳. Combine the crackers, Parmesan cheese, paprika, garlic powder, salt, and pepper in a food processor and process until the mixture resembles coarse meal. (If you don't have a food processor, you can crush the crackers in a sealable plastic bag using a rolling pin.) Transfer the mixture to a shallow bowl or a sheet of waxed paper.

2. Rinse the chicken with cold water and pat dry with paper towels. In a shallow bowl, beat the eggs, honey, and water until blended. Dip the drumsticks or breast pieces into the egg mixture, then dredge them in the cracker mixture. Place the chicken on a lightly oiled baking sheet.

3. Bake drumsticks for 15 minutes, then turn them over and bake for 20 minutes more or until the chicken is tender and the coating golden. Bake chicken strips for 16 to 20 minutes, turning once. Serves 8 to 10.
Does your church have their church cookbook? If ';yes'; buy one and you'll have lots of church potluck recipes.

Otherwise, use whatever cookbooks you have at home.
a nice dip would be good. depending on how many your making this for but you take one package of philadelphia cream cheeses combione it with one can of chili with beans, and 1 bag of finely shredded cheese, pop it into the microwave for about 10-15 min, or until it's bubbly, and melted then stir it all together and voila you'll have a dip they will be raving for , many church functions to come. Bon Appetite.
