I've got a great, simple recipe for a cheese log that's always a huge hit. Now don't judge until you've read the entire recipe. People rave about this log, and it never fails that they think it's some imported specialty cheese... when in fact it starts out as Velveta.

- 1 sm. package of (unsliced) Velveta cheese (makes 2 logs, or the really little package makes one.. Sorry.. I forget the ounces)

- chopped walnuts

- garlic powder (NOT garlic salt!!!)

Bring cheese to room temperature. Using desired amounts (be generous with garlic powder of the above ingredients, mix all together well with hands.

1 Tablespoon (or equal parts), mixed together:

- paprika (good mild Hungarian paprika is best)

- chili powder

- nutmeg

Lay out a piece of waxed paper

- If making 2 logs, break mixture in half.

- Roll one have into about a 6-inch log

- Spread seasoning mixture out on waxed paper and roll log in mixture, making sure to coat entire surface, including the ends

- Shape the other log and roll in mixture

- wrap each in plastic wrap and put in a container or wrap again in foil.

This is a cheese spread, not something that should be sliced, so be sure log is brought out at least 1/2 before serving so that it's spreadable. If people slice it, they tend to slice giant chunks.

Put on a tray with crackers and a few small cheese spreaders.

I guarantee you, this is always a hit, and it's different. The flavor is amazing. There's never any left no matter where I serve it.Potluck help!! i need a good quick recipe for appetizers! does anyone have any?
A friend used to make Snausages. Basically cooked spicy Italian sausage (bulk, crumbled) with Velveeta. It looks gross and needs to be in a crock pot but people loved it. Serve with crackers or cocktail rye.

Even though someone took salsa, a hot con queso dip would be nice. Same deal, spicy salsa and velveeta.

I make a layered dip. On a platter spread refried beans (mix in hot sauce if you like) top with sour cream and shredded cheese. Sprinkle with olives, scallions and chopped tomatoes and jalapenos if you like.

Oh, and a really easy one is spread cream cheese in a pie plate, top with canned chili and shredded cheese and bake at 300 for 20 minutes or so to heat through, I've even nuked it at half power until it was hot.
Salmon Dip (always a fav at my house)

1 8oz block of cream cheese

1 can of smokes salmon (or regular canned salmon and liquid smoke to taste)

green onions

garlic salt

fresh jalapeno (optional)

Mix together and let sit for at least an hour. Serve with crackers and veggies.
Stuffed cherry tomatoes . Stuffed with goat cheese.

Just scrape out the inside of the tomatoe and fill with Goat cheese top with some bread crumbs(optional)

bake on 400 for 10 min

they are terrific and they look great!!!

SO SIMPLE
How about some pinto beans with pork and green chili?

Or bean soup with jalapeno?

Most potlucks I go to have beans, and they tend to go fast!
I kind of agree with the little smokies in BBQ sauce. Use a crock pot and get some frilly toothpicks to get them out of the pot.
little smokies wrapped in bacon throw them in some crockpot with brown sugar thier done when the sugar carmelizers oooh so good
Little smokies wrapped in bacon. sprinkle brown sugar over and bake for 30-45 minutes. Delicious!
