I have to take something to a potluck tea once a week. I'm finding it hard - any easy recipe ideas?

4 skinless, boneless chicken breast halves


1 (10.75 ounce) can condensed cream of chicken soup


1 cup sour cream


32 buttery round crackers


1/4 cup chopped onion


1/4 cup chopped mushrooms


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Boil chicken until cooked through (no longer pink inside), about 20-30 minutes. Chop into bite size pieces and place in a 9x13 inch baking dish.


Combine soup, sour cream, onion (optional) and mushrooms (optional). Pour mixture over chicken and top with crumbled crackers. Cover and bake at 350 degrees F (175 degrees C) for 30 minutes (or freeze for baking at another time).

Potato Salad





Ingredients-


5 potatoes


1 pound bacon


2 stalks celery


4 small green onions


12 stuffed green olives


5 radishes


1/4 cup mayonnaise


1 tablespoon lemon juice





Preparation-


Wash and peel the potatoes and cut into 1/2 to 3/4 inch pieces. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender but still firm, about 10 minutes.


Slice the bacon into small pieces and cook over medium high heat in a large, deep skillet until evenly brown. Do not overcook.


Chop the celery, green onions, stuffed olives and radishes into small pieces and put into a large bowl. Add the potatoes and bacon and mix together. Add the mayonnaise and lemon juice to taste, stir, and place in the refrigerator for a few hours to chill before serving. You may want to add a few sliced hard boiled eggs on top.

Hot German Potato Salad





9 potatoes, peeled


6 slices bacon


3/4 cup chopped onions


2 tablespoons all-purpose flour


2 tablespoons white sugar


2 teaspoons salt


1/2 teaspoon celery seed


1/8 teaspoon ground black pepper


3/4 cup water


1/3 cup distilled white vinegar





1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.


2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.


3. Saute onions in bacon drippings until they are golden-brown.


4. In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

Southern Potato Salad





4 eggs


1/4 cup sweet relish


1 clove garlic, minced


2 tablespoons prepared mustard


1/2 cup mayonnaise


salt and pepper to taste


1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.


2. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.


3. In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together and serve warm.

1 can cream of chicken soup

1 cup shredded cheddar cheese


1 large can chicken (can use real chicken breasts)


1 tube biscuits





in 9x13 baking pan mix everything except the biscuits together, place biscuits on top and bake according to directions on biscuit tube (time and temp)

German Potato Salad





Makes 4 servings





Ingredients:





3 medium potatoes, boiled in skins


3 bacon slices


1/4 cup onion, chopped


1 tablespoon unbleached flour


2 teaspoons sugar


3/4 teaspoon salt


1/4 teaspoon celery seeds


1/4 teaspoon pepper


3/8 cup water


2 1/2 tablespoon vinegar





Preparation:





Cook potatoes in enough water to cover until done, approximately 30 to 40 minutes. Allow to cool. Peel potatoes and slice paper thin. Set aside.





Saut茅 bacon slowly in a frying pan, and drain on paper towels. Saut茅 onion in bacon fat until golden brown. Blend in flour, sugar, salt, celery seeds and pepper. Cook over low heat, stirring until smooth and bubbly. Remove from heat.





Stir in water and vinegar. Heat to boiling, stirring constantly. Boil for 1 minute. Carefully stir in the potatoes and crumbled bacon bits. Remove from heat. Cover and let stand until ready to serve.I have to take something to a potluck tea once a week. I'm finding it hard - any easy recipe ideas?
Broccoli-Rice Casserole





2 c cooked rice (not minute rice)


3 T butter


1 box frozen chopped broccoli


1 can cream of chicken soup


1 can milk


1 sm jar Cheez Whiz


1 c onion chopped


1 c celery chopped


salt and pepper





Cook frozen broccoli in one cup water until thawed. Saute onion and celery in butter. Add soup and milk to onion and celery. Add cheez Whiz. Simmer one minute Add to broccoli, rice and season. Bake 30-40 minutes in 350 degrees. Yield 10 servings.
